Smaltimento: Salsa di Mele or Apple Sauce

Adoro le mele cotte, nelle torte o in forno, come facevano le nonne. La famosa "apple sauce" americana altro non è che mela cotta alla moda. Certo è aromatizzata, la mela è schiacciata oppure frullata per ottenere una vera e propria salsa, ma sempre di mela cotta si tratta! 
Avevo delle mele nella fruttiera da un po' troppo tempo, ho un rapporto strano con le mele, le adoro nelle preparazioni dolci o salate ma mangiate così, come frutta, mi san di poco. Lo so che fanno bene ma le trovo un po' noiosette e così ho deciso di cuocerle. Così cotte e ancora calde, con una spolverata di cannella sono deliziose, mi ricordano la Germania, l'inverno, quello bello, con la neve e le baite e certe torte che solo le nonne sapevano fare. Se anche voi volete elevare lo status della mela cotta ecco cosa dovete fare:
  • 5 mele medie
  • Scorza di limone bio
  • 1 cucchiaio raso di zucchero 
  • 1 pizzico di sale
  • 5 cm di zenzero fresco 
  • 1/2 bicchiere d'acqua
Sbucciate e togliete il torsolo alle mele poi tagliatetele in quarti e a fettine sottili. Mettetele in una pentola dal fondo spesso. Aggiungete 4 strisce di scorza di limone, lo zenzero sbucciato e tagliato a fette sottili, l'acqua, il sale e lo zucchero. Se non vi piace il "pizzichino" dello zenzero potete fare a meno di usarlo oppure potete sostituirlo con una stecca di cannella. Portate e ebollizione, poi abbassate il fuoco, coprite la pentola e fate cuocere per circa 15-20 minuti o fino che le mele sono morbide. Togliete la pentola dal fuoco, scartate le bucce di limone e lo zenzero poi riducete le mele in purea più o meno grossolana a seconda se userete lo schiacciapatate o il frullatore a immersione. Questa salsa può essere consumata con preparazioni dolci, come in aggiunta allo yogurt o da sola, se scaldata appena e con l'aggiunta di un pizzico di cannella, oppure può essere accompagnata ad arrosti di maiale. Si mantiene in frigo per qualche giorno.

I love baked apples, I adore apples in cakes or cooked in the oven, just like grandmothers used to do. The famous American "applesauce" is nothing more than glamorized cooked apples They are flavored with cinnamon and other sipces then the apples are left coarse or pureed to get a smooth sauce, but it’s just cooked apple, nothing more!
I had some apples in the fruit bowl and they were past their prime. I have a strange relationship with apples, I love them in sweet and savory preparations but I rather not eat them as a fruit. I know that apples are good for you but I find them a bit boring and so I decided to cook them. They are delicious once cooked and still warm with a sprinkling of cinnamon. They remind me of Germany, of winter snowy days and mountain huts. They remind me of lovely cakes that only grandmothers knew how to bake. If you too want to raise the status of applesauce here's how you do it.
  • 5 medium apples 
  • Organic Lemon Zest 
  • 1 tbsp of sugar 
  • 1 pinch of salt 
  • 5 cm fresh ginger 
  • 1/2 cup of water 
Peel and core the apples then cut them into quarters and thinly slice them. Place the apples in a thick-bottomed pan. Add 4 strips of lemon peel, peeled the ginger and cut it into thin slices. Add water, salt and sugar to the pan. If you do not like the kick given by ginger can leave it out, or you can replace it with a cinnamon stick. Bring to the boil, then lower the heat, cover the pan and cook for about 15-20 minutes or until the apples are soft. Remove the pan from the heat, discard the lemon zest and ginger, then purée the apples with a blender or usa a potato masher if you prefer a coarse sauce. This sauce can be served with sweet preparations, as in addition to yogurt or by itself heated slightly with a pinch of cinnamon, or it can be served with roast pork. It keeps in the fridge for a few days.

    1. Io ho finito la mia scorta oggi. Con questo tempo stupido (freddo e nuvole minacciose) un po' di mela calda è di assoluto conforto! :)
