Nuovi Incontri - Crema di Cavolfiore Arancione or Orange Cauliflower Soup

A couple of weeks ago Andrea and I went to Turin. In the evening, before hitting the road for the long journey home , we decided to pop in to Eataly . For those not familiar with it, it’s an indoor market, in this case is located in the building that once housed the "Punt e Mes" factory. This is not just a market because within it, amongst the aisles covered in shelves neatly stacked with an incredible variety of food, all carefully selected by Slow Food , there are restaurants that offer great grub. From Tuscan cuisine with fish soup and juicy beef t-bone steaks, to piadine filled with squacquerone cheese and Parma ham, to the beautiful pizzas, or again fried food morsels served with cold beers. You can find all these dishes by strolling amongst the shelves of the market. This certainly is a paradise for gourmands! Unfortunately we were coming straight from a meeting where we were served a hearty pre-dinner cocktail with lots of lovely food along with drinks and therefore we were not really hungry so instead of having dinner at Eataly we did a little shopping. We got a nice jar of hazelnut cream , some spices covered with confectioner sugar, those tiny sweets that are offered in Indian restaurants after a meal and we also bought a beautiful orange cauliflower. The orange cauliflower is rich in beta-carotene, hence its beautiful colour, and because of that it gives us a higher intake of vitamin A compared to its closest pale relative. A good reason to buy it if you can find it on the market stalls . A chose to prepare a soup with the cauliflower and to accentuate its colour I thought I'd add a little turmeric. Healthy and delicious soup is suitable for this season and it gently accompanies us into the winter.
Serves 2-3
  • 1/2 orange cauliflower, or a small one
  • 1 onion
  • 2 medium-sized potatoes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon black mustard seeds
  • 1/2 teaspoon of turmeric
  • salt
  • pepper
  • rustic bread to serve
Wash the cauliflower and divide it into florets, peel the potatoes and cut into chunks. Heat the oil in a saucepan, coarsely chop the onion and cook in the oil over medium heat. Add the turmeric and mustard seeds and toast for a few minutes. Add the cauliflower and potatoes, a pinch of salt and cook for a few minutes. In the meantime, bring some water to a boil, add the vegetables to the pan with the onion and pour the water just until it covers the veggies. Bring to a boil then reduce the heat, put a lid on and cook for about 10 minutes or until the cauliflower is cooked. Remove some cauliflower florets for decoration and mix the rest with a hand blender. Taste and season with salt and pepper, add more hot water if the cream is too thick and serve garnished with the cauliflower florets and toasted slices of rustic bread.
