Non Solo per le Feste - Tronchetto di Natale or My Yule Log

Ci ho pensato per un po' di anni, si si, non avete letto male, sono anni che penso di provare a fare il tronchetto di Natale, ma poi per mancanza di tempo o disorganizzazione finisco sempre per accantonarlo. Non quest'anno però. Ho preparato il mio piano d'attacco per il pranzo di Natale includendo il tronchetto e via via che cancellavo le idee che non avrei avuto tempo o voglia di preparare ho sempre evitato proprio questo dolce perché questo sarebbe stato il suo anno. Certo ho preparato anche delle mince pies, che per me non è Natale senza mince pies come per altri non lo è senza tortellini, vedi mia mamma, e ho preparato il mio rotolo il giorno della vigilia.
Devo dire che sono stata piacevolmente sorpresa dalla consistenza della pasta biscotto anche se però la ricetta che ho preso come riferimento era corredata da una foto dove il rotolo si arricciolava in tanta volute mentre il mio è riuscito a fare un giro su se stesso a malapena! Colpa delle poche istruzioni? Ho notato che nelle ricette sulle riviste di cucina italiane non vengono quasi mai messe le misure delle teglie usate, cosa per me fondamentale per ottenere ottimi risultati. Ma ho fatto spallucce e non mi sono curata di questo piccolo particolare, ho preparato la mia crema di castagne con aggiunta di cioccolato al latte per dare maggior ricchezza al dolce, l'ho farcito e dopo aver preparato la ganache l'ho decorato. Ai miei occhi di novizia il tronchetto era bellissimo, così con tutte le sue imperfezioni. Al momento di servirlo ho voluto strafare e l'ho accompagnato con una crema inglese tutta panna che riservo solo alle feste natalizie. Il connubio fra il tronchetto fresco e ricco dei sapori del cioccolato e di castagne si sposa perfettamente con la crema tiepida profumata di vaniglia.
Ecco la ricetta così come l'ho rielaborata.

Per 10-12 fette

Per la pasta biscotto:

150 g di farina 00
150 g di zucchero semolato aromatizzato alla vaniglia
4 uova
50 g di burro + 1 noce
sale

Per la farcitura:

400 g di crema di castagne
50 g di burro morbido
60 g di cioccolato al latte
1 cucchiaio di zucchero semolato aromatizzato alla vaniglia
1 tuorlo
2 cucchiai di cognac
2 cucchiai di cacao amaro

Per la copertura e decorazione:

300 g di cioccolato fondente al 43%
100 g di burro
ciliegie candite rosse e verdi
zucchero a velo

Accendete il forno a 220°C. 
Rivestite di carta da forno imburrata una placca di 40 cm x 25 cm. Fondete il burro e fatelo freddare. Lavorate in una ciotola i tuorli con lo zucchero poi aggiungete il burro fuso e la farina a pioggia. Montate gli albumi con un pizzico di sale e incorporateli al composto preparato precedentemente. Versate il composto ottenuto sulla placca rivestita di carta da forno e livellatelo con una spatola. Cuocete per 10 minuti circa.
Inumidite un telo pulito e ricopritelo con della carta da forno. Capovolgete su questa la teglia con la pasta biscotto e togliete la carta da forno su cui era stata cotta la pasta biscotto. Aiutandovi con il telo arrotolate la pasta biscotto partendo da uno dei lati lunghi e formate un cilindro che chiuderete nella carta da forno e metterete in frigo per 1 ora. 
Preparate la farcitura facendo fondere il cioccolato al latte. Versatelo in una ciotola insieme a tutti gli altri ingredienti e mescolare fino ad ottenere una crema omogenea. Prendete la pasta biscotto, srotolatela, spalmateci sopra la crema e riavvolgete il rotolo stringendo e mettendolo in freezer per 1 ora. Passato questo tempo togliete la carta da forno, tagliate due pezzi di circa 3 cm dalle estremità con un taglio obliquo. Preparate la copertura sciogliendo il cioccolato fondente con il rimanente burro poi fate intiepidire il composto, Spalmatene un po’ sulle estremità oblique dei due pezzi che avete tagliato e “incollateli” al tronco principale per simulare due rami spezzati. Ricoprite il tronchetto con la crema di cioccolato poi passateci sopra i rebbi di una forchetta per simulare la corteccia. Mettete il dolce in frigo per almeno 2 ore prima di decorarlo. Tagliate le ciliegie verdi in modo da ottenere delle foglie e posizionatele sul tronco vicino a qualche ciliegia rossa intera. Cospargete con dello zucchero a velo e servite.

I’ve been thinking about it for years, yes you didn’t misread it, I’ve been wanting to try and make a Christmas log for yonks, but then due to lack of time or disorganization I always ended up setting this project aside. Not this year though. I carefully prepared my plan for Christmas lunch including a recipe for a Yule log and gradually I started deleting  the ideas that I would not have had time or desire to prepare but this dessert remained on the list because this was going to be its year. Of course I prepared mince pies, as for me it’s not Christmas without mince pies as for others it is not Christmas without tortellini, like my mom. So I prepare my Yule log on Christmas Eve.
I must say that I was pleasantly surprised by the consistency of the dough however, even though the recipe I used as a reference was accompanied by a picture where the log curled in large spirals mine did barely a turn! I guess there weren’t enough detailed instructions. I noticed that most of the recipes on Italian cooking magazines never carry the measurements for the baking trays used to bake the cakes.  Such a fundamental piece of information to get good results. But I shrugged and I didn’t care if my log wasn’t curling enough and carried on preparing my  chestnut filling adding milk chocolate to give more richness to the dessert, I spread the filling and prepared the ganache, then I decorated the log. To my novice eyes the Yule log was ever so beautiful, along with all its imperfections. As I felt like going over the top I served my chocolate log with some traditional English custard made with full fat cream, a rich treat I only make at Christmas. The combination of the freshness of the log, the rich flavours of chocolate and chestnut filling fits perfectly with the warm vanilla scent of the custard.

Here is the recipe adapted by me.

10-12 servings 

For the dough: 

150 g flour 00
150 g vanilla flavored caster sugar 
4 eggs
50 g butter + 1 tablespoon
salt

For the filling: 

400 g of chestnut cream
50 g soft butter
60 g of milk chocolate
1 tablespoon granulated sugar flavored with vanilla
1 egg yolk
2 tablespoons cognac
2 tablespoons unsweetened cocoa 

For the frosting and decoration: 

300 g dark chocolate 43%
100 g of butter
red and green candied cherries
powdered sugar 

Preheat the oven to 220 ° C.
Line a 40 cm x 25 cm baking tray with buttered parchment paper. Melt the butter and let it cool. In a bowl beat the egg yolks with the sugar then add the butter and the flour little by little. Whisk the egg whites with a pinch of salt until stiff and incorporate them into the mixture. Pour the mixture obtained on baking tray lined with baking parchment and level it with a spatula. Cook for about 10 minutes.
Dampen a clean kitchen cloth and line with baking parchment. Turn the tray with the cooked dough over the cloth lined with parchment an peel away the parchment paper on which the dough was cooked. With the help of the cloth roll the dough starting from one of the long sides and make a long tight cylinder. Wrap it well in the parchment and put in the fridge for 1 hour.
Prepare the filling by melting the milk chocolate. Pour into a bowl along with all the other ingredients and mix until you get a smooth mixture. Take the dough out of the fridge, unroll it, spread the milk chocolate and chestnut cream on top of it, roll it again making sure the log is tight, cover with parchment and put it in the freezer for 1 hour. After this time remove the parchment paper, cut out two 3 cm pieces from each end of the log at an angle. Prepare the frosting by melting the chocolate with the remaining butter and allow the mixture to cool for a few minutes until it is not too runny then spread a bit on the oblique cut ends of the two small pieces and "paste” them to the main trunk to simulate two broken branches. Cover the all log with the remaining frosting then run the tines of a fork over the surface to simulate bark. Put the cake in the fridge for at least 2 hours before decorating it. Cut the green cherries in order to obtain some leaves and place them on the trunk near some red whole cherry. Sprinkle with icing sugar and serve.

    1. Anche io ho visto il tuo tronchetto e quindi decretiamo che il 2013 è stato l'anno del tronchetto di Natale! ^_^
      Anche a me l'idea di meno impasto più ripieno piace molto ma un altro riccioletto non lo avrei disdegnato...

    Io qualche volta li faccio i rotoli ma non riesco a renderli guardabili per ora!! Un abbraccio!!

    1. Ciao Silvia, grazie per i complimenti, sei troppo carina! Anche io avevo provato a fare un rotolo in passato ma non era per nulla bello, né tanto buono a dire il vero, un po' gommosetto, con un ripieno di marmellata che non riempiva un granché, questo mi ha dato molta più soddisfazione!
