In poco tempo ho provato già due ricette tratte dal libro “NEW YORK – Le ricette di culto” di Marc Grossman che mi è stato regalato da Andrea per Natale. Di solito ci metto un po’ prima di provare una ricetta da un libro nuovo, prima lo devo studiare bene, capire come “funziona”, me lo porto in giro per la casa come fa un bimbo con un gioco nuovo. Sosta un po’ sul comodino, lo appoggio da qualche parte a portata di mano e quando sono sul divano e guardo un film lo sfoglio distrattamente. Guardo la libreria per trovargli un posto congeniale, lo catalogo nella mente e poi finalmente scelgo la ricetta che lo inaugurerà. Con questo libro sono partita dai panini per gli hamburger, una delle cose che Andrea ama di più, gli hamburger, non i panini, anche se il pane ha la sua importanza. Ne avevo provata qualcuna in precedenza e devo dire che i risultati in alcuni casi erano stati ottimi, ma la ricetta di questo libro è veramente fenomenale. Presto la condividerò con voi e mi saprete dire. Stamani invece è stata la volta di questa torta al cioccolato un po’ diversa, sempre per strappare un sorriso ad Andrea che dall’inizio dell’anno è rinchiuso in casa con un piede ingessato e comincia a sembrare una tigre in gabbia. Per uno come lui abituato a fare sport ed essere fuori casa praticamente sempre è uno shock dover stare fra quattro mura per settimane, così, senza esagerare altrimenti poi dovrà correre un bel po’ prima di perdere i chili presi durante la “cattività”, in questo periodo gli sto preparando tutti i piatti che preferisce. Vediamo se questa torta al cioccolato passerà il test.
Ho modificato la ricetta che richiedeva 6 uova e io ne avevo solo 5 così ho aggiunto lo yogurt e fra gli ingredienti c’era anche la crème fraîche che non riesco mai a trovare, così ho optato per della panna fresca visto che il tocco di acidità sarebbe stato dato dallo yogurt. Ho anche evitato di aggiungere l’estratto di vaniglia e ho optato per lo zucchero vanigliato.
Tortiera a cerniera da 24 cm
  • 300 g di cioccolato fondente
  • 125 g di burro + 1 noce per lo stampo
  • 2 cucchiai di cacao amaro in polvere
  • 5 uova
  • 45 ml di yogurt bianco
  • 100 g di zucchero vanigliato* + un po’ per lo stampo
  • 1 pizzico di sale
  • 150 ml di panna fresca
Scaldate il forno a 150°(ventilato).
Imburrate generosamente la teglia e cospargetela con dello zucchero poi rivestite l’esterno della teglia con dell’alluminio per renderla impermeabile all’acqua del bagnomaria.
In una pentola sciogliete a fuoco dolcissimo la cioccolata, il burro e il cacao.
Montate gli albumi con 50 g di zucchero e il sale fino ad ottenere una consistenza come di meringa.
In un’altra ciotola sbattete i tuorli, lo yogurt, i rimanenti 50 g di zucchero e la panna fino ad ottenere un composto cremoso, ci vorranno circa 5 minuti e il composto rimarrà comunque abbastanza liquido.
Aggiungete il composto di cioccolato al mix di tuorli e amalgamate bene. Incorporare gli albumi montati e mescolare delicatamente dal basso verso l’alto fino ad ottenere un composto omogeneo che verserete nella vostra tortiera. Mettete la tortiera in una teglia capiente e versate nella teglia dell’acqua bollente fino a ¾ dell’altezza della tortiera. Infornate e fate cuocere per circa 1 ora o fino a quando uno stecchino inserito al centro della torta non ne uscirà pulito. Sfornate lasciando la tortiera nel bagnomaria ancora per circa 5 minuti poi togliere dal bagnomaria e far raffreddare su una griglia. Servire fredda con della panna montata. 

*Mettete dello zucchero semolato in un barattolo di vetro e aggiungete delle stecche di vaniglia usate, accuratamente sciacquate sotto acqua corrente fredda e tamponate con della carta da cucina. Chiudete il barattolo e scuotetelo di tanto in tanto.

 I have already tried two recipes from the book " NEW YORK - The recipes of worship ," Marc Grossman that was given to me by Andrea as a Christmas present. Usually it takes a while before trying a recipe from a new book, first I have “to study” the book, figure out how it works, I carry it around the house as does a child with a new toy. I leave it on the bed side table for a while, the leave it somewhere at hand for when I watch a movie on the couch so that I can flip through it absentmindedly. I look at the bookshelves to find its perfect place, I catalogue it in my mind and then finally choose the recipe to inaugurate it. I started from burgers buns, one of the things that Andrea loves most, burgers I mean, not the buns, even if the bread has its own importance. I previously tried some other recipe and I must say that in some cases the results were good, but the recipe in this book is truly phenomenal. Soon I will share it with you.
This morning though it was the turn of this chocolate cake with a twist. I made it essentially to lift Andrea’s spirit because he has been locked up in the house with a foot in plaster since the beginning of the year and he’s now starting to look like a tiger in a cage. For someone as sporty as he is used at being outside the home almost all the time it must be such a shock having to stay within four walls for weeks at end. Still I can’t overfeed him otherwise he then will have to run a lot before losing the extra kilos gained during the " captivity ". I am preparing all the dishes he prefers nevertheless. Let's see if this chocolate cake will pass the test.
 
I adapted the recipe that called for 6 eggs and I only had 5, so I added some yogurt. Also among the ingredients there was crème fraîche but I can never find it, so I opted for fresh cream as the touch of acidity would be given by the yogurt. I also avoided adding vanilla extract and I opted for vanilla sugar.
For a 24 cm cake tin
  • 300 g of dark chocolate
  • 125 g butter + 1 knob for the tin
  • 2 tablespoons unsweetened cocoa powder
  • 5 eggs
  • 45 ml of plain yogurt
  • 100 g vanilla sugar * + a couple of spoons for the tin
  • 1 pinch of salt
  • 150 ml of fresh cream
Preheat the oven to 150° C fan.
Butter the tin and generously sprinkle with sugar then wrap the outside of the pan with aluminium as the cake will cook in a water bath.
Melt the chocolate, butter and cocoa in a saucepan over low heat.
Beat the egg whites with 50 g of sugar and the salt until it looks like a meringue.
Beat the egg yolks, yogurt, the remaining 50 g sugar and the cream in another bowl and mix until creamy, it will take about 5 minutes and the mixture will still be fairly runny.
Add the chocolate mixture to the egg yolk mixture and stir well. Fold in the egg whites and mix gently until you get a smooth mixture then pour it into the tin. Put the tin into a large tray and pour boiling water into the tray until it reaches ¾ of the tin. Put in the oven and cook for about 1 hour or until a toothpick inserted in the centre of the cake will come out clean. Remove from the oven, leave in the water bath for about 5 minutes, then remove from the water bath and let cool on a rack. Serve cold with whipped cream.
 
* Put granulated sugar in a glass jar and add some used vanilla pods. First you must rinse them thoroughly under cold running water and pat them dry with a paper towel. Close the jar and shake occasionally.

      Anche a me è piaciuta molto, un incrocio fra una mousse e un soufflé...deliziosa! ^_^

  3. Oh, come mi piace questa torta! La quantita' di panna che hai usato e' la stessa prevista per la creme fraiche? Qui la trovo e mi piacerebbe davvero provare questa ricetta! Attendo con ansia quella dei panini, ho comprato uno stampo per hamburger e non vedo l'ora di usarlo! A presto!

    1. Ciao Laura, la quantità di panna che ho usato è la stessa della panna acida e lo yogurt è stato messo al posto di un uovo.
      Fammi sapere come viene con la panna acida, immagino buonissima!
