Pasta per Gyoza or Gyoza Wrappers

Pubblico di nuovo la ricetta della sfoglia per i gyoza perché stavolta ho fotografato i passaggi della preparazione.
Una volta, quando ancora abitavamo a Milano, ho fatto i gyoza con ripieno di maiale e verdure. Sono andata in un negozio di alimentari asiatici nei pressi della Stazione Centrale e ho comprato dei dischetti di pasta già pronti, ho preparo il ripieno e armata di santa pazienza ho fatto questi ravioli deliziosi.
Una soddisfazione vederli in fila sul vassoio, con la loro forma un po' particolare, tutti belli uguali.
Visto che ho un po' di tempo in questo periodo ho pensato di provare a fare la pasta da sola.
I ravioli sono venuti benissimo. Magari non proprio così precisi come quelli di Milano nelle loro sfogliettine rotondissime, ma sono orgogliosissima di averli fatti tutti io e si sa che artigianalità vuol dire anche unicità no?

Ecco le dosi per 36 ravioli

Per l'impasto:
  • 1 tazza e 1/2 di farina 0 (180 g circa) + un po' per il piano di lavoro
  • 1/2 cucchiaino di sale marino fino
  • 90 ml di acqua appena bollita
Mettete la farina in una ciotola, fate una fontana. Sciogliete il sale nell'acqua e versate nella ciotola. Mescolate dapprima con un cucchiaio e poi con le mani fino a ottenere un impasto omogeneo. Se non tutta la farina viene incorporata aggiungere qualche goccia d'acqua.
Lavorate l'impasto su una spianatoia leggermente infarinata per 5 minuti fino ad ottenere una palla liscia, ed elastica. L'impasto a questo punto non deve essere appiccicoso e se premuto con un dito deve tornare indietro senza lasciare il segno.
Dividete l'impasto in due rotolini di circa 15 cm di lunghezza e spolverateli di farina. Copriteli con un canovaccio pulito e lasciate riposare per 30 minuti a temperatura ambiente.
Tagliate ogni rotolo a metà, ogni metà in tre parti e ognuna di queste parti ancora in 3 parti. Otterrete così 36 palline di impasto che andranno leggermente schiacciate e infarinate. Ricoprite le palline di impasto per evitare che si secchino e cominciate a stenderle.
Per questo lavoro è necessario dotarsi di un piccolo mattarello.
Prendete una pallina di impasto e con movimenti dall'esterno verso l'interno, usando una mano per girare l'impasto, stendete la sfoglia in un cerchio di circa 8 cm.
Si usa questa tecnica, dall'esterno all'interno del cerchio per ottenere dei tortelli che siano più sottili alle estremità e più spessi al centro. Usate uno stampino, un coppapasta o un vasetto di plastica, come ho fatto io, per rifilare l'impasto.
Stendete qualche pallina d'impasto, tenendo le altre coperte e poi prendetene una per volta e mettete un cucchiaino di ripieno al centro. Chiudete a semicerchio premendo i due lembi al centro poi, partendo da un'estremità arricciare la sfoglia creando delle pieghe che devono arrivare fino al centro e fate lo stesso all'altra estremità in modo da creare un raviolo con una base ampia che possa stare "seduto". Mettete i ravioli su un vassoietto infarinato facendo attenzione a che non si tocchino.
A questo punto potrete procedere alla cottura dei ravioli, al vapore o alla piastra, come più vi piacciono.

I want to talk, once again, about gyoza wrappers because this time I took photos while I was making them.
Once, when we were still living in Milan, I made pork and vegetables gyoza. I went to an Asian food store near the Central Station and I bought some ready-made gyoza wrappers, I made the filling and patiently shaped these delicious dumplings.
I was really pleased when I saw them lined up on a tray, their lovely shape repeating itself row after row.
Since I have some time on my hands these days, I thought I would try to make the wrappers. The dumplings came out very well. Maybe they’re not as perfect as those I made in Milan, but I'm very proud of having made them from scratch.
For 36 dumpling wrappers
  • 1 ½ cup of flour 0 (about 180 g), plus a little for the work surface
  • ½ teaspoon of fine sea salt
  • 90 ml of freshly boiled water
Put the flour in a bowl, make a well in the centre. Dissolve the salt into the water and pour into the bowl. First mix with a spoon and then with your hands until you get all the flour has been incorporated, if not add a few drops of water.
Work the dough for 5 minutes on a lightly floured surface until you get a smooth and elastic ball. The dough should not be sticky and if pressed with a finger it should spring back without leaving a mark.
Divide the dough into two rolls of about 15 cm in length and sprinkle with flour. Cover with a clean kitchen towel and let rest for 30 minutes at room temperature.
Cut each roll in half, then each half in three parts and again each of these parts in three parts. You will get 36 pieces of dough. Slightly press with the palm of your hand and lightly flour them. Cover to prevent them from drying out and begin to roll into disks. You’ll need a small rolling pin.
Take a piece of dough and flatten it in a circle of about 8 cm with movements from the outside to the inside, using a hand to turn the dough.
This technique is used, from the outside to the inside of the rim to get dumplings which are thinner around the edges and thicker at the centre. Use a cookie cutter, or a round plastic jar, as I did, to trim the dough.
Flatten all the pieces of dough, keeping them covered and once they’re all ready, then take one at a time and put a teaspoon of stuffing in the centre. Close pressing the two edges together sealing them with a little water, starting from one end, folding one side over the other, creating folds making a dumpling with a wide base that can be "seated" in the pan. Put the dumplings on a floured tray, allow some space between them.
At this point you can cook the ravioli, steaming or frying them, as you prefer.

      Con la farina di riso non ho mai provato...sono curiosa, farò qualche esperimento.
