Giallo Come il Sole - Spaghetti al Curry con Porri e Uovo Mimosa or Curry Spaghetti with Leek and Crumbled Egg Yolk

Adoro aggiungere spezie e sapori forti a piatti altrimenti delicati. Una sferzata di colore e di gusto trasformano un semplice piatto di pasta in un'esperienza da ricordare con piacere e da replicare.
Ho preparato questa pasta la prima volta tanti anni fa, quando ancora abitavamo a Milano e oggi ho pensato di riproporla e sono contenta di averlo fatto.
Un piatto rotondo, completo e saporito, di semplice realizzazione, trasforma un pranzo settimanale in una festa.

 Ingredienti per 2 persone:
  • 160 g di spaghetti
  • 1 uovo
  • 1 porro piccolo
  • 1 cucchiaino di curry
  • 1/2 cucchiaino di curcuma
  • 2 cucchiai di olio extravergine d'oliva
  • coriandolo fresco
  • sale
  • sale marino integrale grosso
Mettete l'uovo in una pentolina, ricopritelo d'acqua fredda e portate a ebollizione. Cuocere per 9 minuti e poi scolatelo e mettetelo in acqua fredda.
Affettate sottilmente il porro, scaldate l'olio in una padella e aggiungete il curry, la curcuma, mescolate con un cucchiaio di legno e fate soffriggere per un minuto.
Aggiungete il porro, salate e fate soffriggere per qualche minuto.
Aggiungete un goccio d'acqua e coprite. Fate cuocere a fuoco moderato fino a che il porro è morbido, circa 5-10 minuti.
Nel frattempo mettete una pentola d'acqua sul fuoco e quando bolle aggiungete il sale grosso e cuocete gli spaghetti.
Sbucciate l'uovo, togliete l'albume e passate il tuorlo attraverso un setaccio per ottenere dei piccolo granuli.
Tritate il coriandolo.
Scolate gli spaghetti al dente, versateli nella pentola con il porro e saltateli.
Servite gli spaghetti cosparsi con la mimosa di uovo e il coriandolo tritato.

I love adding spices and intense flavours to otherwise bland dishes. A burst of colour and flavour it’s all you need to transform a simple pasta dish in an memorable experience, and you’ll want to make this dish again and again.
I made this pasta for the first time many years ago when Andrea and I lived in Milan, and today I've decided to make it again. I'm glad I did.
This robust dish is a tasty and satisfying meal, easy to make, a weekday lunch turned into a party.
Serves 2:
  • 160 g spaghetti
  • 1 egg
  • 1 small leek
  • 1 tsp curry powder
  • 1/2 tsp turmeric powder
  • 2 tablespoons extra virgin olive oil
  • fresh coriander
  • fine sea salt
  • course sea salt
Put the egg in a saucepan, cover with cold water and bring to a boil. Cook for 9 minutes, drain it and let cool in cold water.
Thinly slice the leek, heat the oil in a pan and add the curry powder, turmeric, stir with a wooden spoon and fry for a minute.
Add leek, salt and sauté for a few minutes.
Add a little water and cover. Cook over medium heat until the leek is tender, about 10 minutes.
Meanwhile, bring some water to a boil in a large saucepan, add the coarse salt and cook the spaghetti.
Peel the eggs, discard the egg white and pass the yolk through a sieve in order to get obtain small granules.
Chopped the coriander.
Drain the spaghetti al dente, and sauté them with the curried leeks.
Serve the pasta sprinkled with the egg yolk and chopped coriander.
