Esperimenti - Panna Cotta con Agar Agar or Agar Agar Panna Cotta

Finalmente mi sono fatta coraggio e ho provato nuovamente a fare la panna cotta utilizzando l'agar agar. Ci avevo provato una volta, tempo fa e il risultato era stato disastroso perché avevo usato troppa agar agar. Era uscito fuori un blob gommoso e immangiabile una cosa veramente tremenda che mi aveva lasciata sconsolata e delusa. Ma visto che non mi do mai per vinta alla prima sconfitta ho aspettato che il ricordo del flop si affievolisse e mi sono rimessa all'opera.
La panna cotta stavolta si è rivelata decisamente migliore, dal sapore delizioso, la consistenza un attimo troppo morbida forse, ma mi ero preparata e l'ho messa in coppe trasparenti pronta per essere servita senza doverla sformare.
I fatto è che non riesco a dosare l'agar agar come si deve, io l'ho comprata in erboristeria un tanto all'etto, e non è in pratiche bustine da 1.5 g che sono perfette per dosaggi così minuscoli.
Ho provato con mezzo cucchiaino, di quelli che si usano per misurare in cucina, per essere il più precisa possibile, forse ne servivano 3/4 per ottenere la giusta consistenza, o forse avrei dovuto usare solo panna e niente latte. Ho letto tante ricette, le ho studiate e poi sono uscita con questa mia versione.
Servita con ottime fragole di stagione è stata comunque spazzolata con gran gusto da me e da Andrea.
A meno che compri un bilancino da orafo, e non credo proprio che lo farò, continuerò ad andare per tentativi con il mio cucchiaino e vedrò di trovare la ricetta perfetta.
Per 4 porzioni
  • 500 ml di panna
  • 250 ml di latte
  • 1/2 cucchiaino di agar agar
  • 1 bacca di vaniglia
80-100 g di zucchero semolato
Incidete per il lungo la bacca di vaniglia, grattate via i semini con la lama di un coltello e metteteli in una pentola insieme alla bacca e alla panna. Mettete a scaldare a fuoco basso. 
In un altro pentolino scaldate il latte con lo zucchero e l'agar agar, poi unite alla panna dopo aver tolto la bacca di vaniglia.
Cuocete per circa 5 minuti senza far prendere il bollore, versate subito negli stampi e mettere in frigo immediatamente.
Fate freddare in frigo per almeno un paio d'ore e servite con frutta di stagione o al naturale.


English Version

I finally got the audacity, once again, to try and make panna cotta using agar agar. I tried before, long time ago, and the result was disastrous because I used too much agar agar. It came out as an inedible rubbery blob, something really awful that left me annoyed and disappointed. As I never give up, I waited for the memory to fade and went back to work on it.
The outcome this time has been much better, the panna cotta tastes delicious, and even if the texture was a bit on the runny side it held its shape. I thought it would come out a bit runny so I put my panna cotta in glass serving cups in order to avoid unmoulding it.
The fact is that I can’t measure out the agar agar accurately, I bought it loose in a whole food shop, and the fact that it is not divided into practical 1.5 g sachets makes the measuring quite impossible for tiny amounts. I tried with half a teaspoon, using one of those measuring ones, to be as accurate as possible, perhaps next time I’ll use 3/4 teaspoon to get the right consistency, or maybe I should only use cream and no milk. I read so many recipes, I studied and then I tried with my version.
I served it with excellent strawberries, now in season, and it was scoffed down by Andrea and my good self.
Unless I buy a goldsmith scale, and I do not think I will, I will keep on going by trial and error with my measuring spoons to try and find the perfect recipe.

  • 500 ml fresh cream
  • 250 ml milk
  • 1/2 teaspoon of agar agar
  • 1 vanilla pod
  • 80-100 g of granulated sugar
Cut the vanilla pod lengthwise, scrape away the seeds with a knife and put them in a pot along with the pod and the cream. Warm over low heat.
In another saucepan, heat the milk with sugar and agar agar, then add to the cream after having removed the vanilla pod.
Cook for about 5 minutes without bring to a boil, pour immediately into molds and refrigerate straightaway.
Let cool in refrigerator for at least a couple of hours and serve with seasonal fruit or on its own.

  1. Io da anni mi sono convertita all'agar agar e lo acquisto sfuso in polvere. Per le quantità indicate da te, utilizzo circa 1 cucchiaino da tea e ti garantisco che la consistenza è perfetta anche x essere sformata. Prova ad unirla a freddo e cuocere con gli altri ingredienti, vedrai che il risultato sarà ottimo.
    Tienimi aggiornata che poi passo a fare l'assaggio :-P

    1. Lanciati Silvia, e magari segui i consigli di Consuelo nel commento sopra per la dose di agar agar da usare. Io lo farò la prossima volta che faccio la panna cotta. ^_^
