Dolcezze estive - Torta di Ciliegie e Fragole or Cherry and Strawberry Cake

Prima che spariscano dai banchi del mercato, che la loro stagione è breve, ecco una ricetta che si addolcisce con i frutti rossi della primavera: fragole e ciliegie!
Questa torta semplice è deliziosa così com'è e non ha bisogno di creme, coperture, o accompagnamenti, il sapore della frutta matura la renderà unica, adatta per una merenda, facilmente trasportabile per un picnic, farà felici grandi e piccini.  

Ingredienti:
  • 250 g di ciliegie 
  • 250 g di fragole
  • 3 uova
  • 200 g di farina
  • 120 g di burro fuso
  • 120 g di zucchero
  • 1 bustina di lievito in polvere

Riscaldate il forno a 200°C.
Spennellate con poco burro fuso una tortiera di 22 cm di diametro e infarinatela oppure usate della carta da forno bagnata e poi spennellatela con il burro.
Lavate e asciugate le ciliegie e le fragole, dividetele a metà e denocciolate le ciliegie.
In una ciotola capiente mescolate la farina setacciata con il lievito, lo zucchero, le uova e il burro fuso amalgamando bene gli ingredienti. Incorporatevi la frutta e  versate il composto nella tortiera, livellandolo con una spatola.
Infornate per 40 minuti circa.
Fate freddare la torta su una griglia prima di servire.

English Version
Here is a cake enriched with the most loved spring red fruits: strawberries and cherries. Let’s make it before they disappear from the market stalls, as they are in season for a short period of time. This cake is delicious as it is, it doesn’t need custard or frosting or any other trimmings, the ripe fruit flavour will make it unique, suitable for a snack, it can be easily carried for a picnic, and it will be everybody's delight.

Ingredients:

  • 250 g cherries
  • 250 g strawberries
  • 3 eggs
  • 200 g all-purpose flour
  • 120 g butter, melted
  • 120 g caster sugar
  • 1 tablespoon baking powder
Preheat the oven to 200°C.
Brush a 22 cm round cake tin with a little melted butter and flour it or use wet baking parchment and then brush it with some of the melted butter.
Wash and dry the cherries and strawberries, cut them in half and pit the cherries.
In a large bowl mix the flour with the baking powder, sugar, eggs and melted butter, mixing the ingredients well. Stir in the fruit and pour the mixture into the tin, leveling it with a spatula.
Bake for about 40 minutes.
Let cool the cake on a wire rack before serving.
