mini marshmallows bianchi o marshmallows normali tagliati in 4

For those who haven’t yet thought of how to fill the Epiphany stockings (here in Italy we fill stockings with goodies to celebrate the Epiphany on 6th January) , for those who want to give away some cute homemade and all in all not too expensive gifts, here are a couple of ideas to whip up even at the last minute. I made these little gifts and gave them to some girlfriends at Christmas, the mix for the hot chocolate was put in a white ceramic cup I bought for the occasion, but I forgot to take a picture of it so here is the package that I’ll give to my sisters, along with the Christmas gifts that we will exchange in a few days. Living away from my family leads to this extension of the Christmas celebrations and I've always loved it. What could be nicer than keep on celebrating with loved ones?
But back to our recipes.
Here's how to prepare a good amount of hot chocolate mix.
  • 100 g milk or white chocolate
  • 180 g unsweetened cocoa
  • 125 g icing sugar
  • 1 pinch salt
  • 200 g milk powder
  • mini marshmallows or white regular size marshmallows cut into 4
First chop the chocolate and place in a blender, pulse until it will be finely chopped. Mix the remaining ingredients, apart from the marshmallows, in a bowl then add the mixture to the chocolate. Pulse until all the ingredients are well combined and the chocolate is very finely chopped. Divide the mixture into transparent bags, add the marshmallows and close with a ribbon.

Attach the following instructions to the mix:
"Put 3 tablespoons of mixture into a bowl, add 200 ml of hot milk, stir and enjoy!"

As for the almonds you can follow this recipe, or you can make them like I did.
For 4 250 ml jars
  • 650 g unpeeled almonds
  • 1 egg white
  • 1/2 teaspoon vanilla extract
  • a pinch of salt
  • 1/2 teaspoon ground cinnamon
  • 150 g of light brown sugar
Preheat the oven to 150°C.
In a large bowl, beat the egg white until it becomes foamy then add the vanilla extract, beat a few more seconds and add the almonds, stir well so that the almonds are well covered in egg white.
In a bowl, mix the remaining ingredients then pour over the almonds. Line a baking sheet with parchment paper then arrange the almonds in a single layer. Sprinkle with a little more sugar and bake for about 20 minutes. Remove from oven, let cool a little and brake the clusters. If the almonds are still wet put them back in the oven at 60°C until they are completely dry, another 15-20 minutes should be enough.
Put the almonds in an airtight container, and they will keep for a couple of weeks.

But don’t worry, they won’t last that long!
