La Semplicità - Tahina, la Crema di Semi di Sesamo or Tahini

Un bel po' di tempo fa la mia amica Francesca mi aveva chiesto dove compravo la tahina per fare l'hummus perché dove abita lei non si trovava. Così come per tante cose si tende a pensare che se non si trovano se ne può fare a meno, certo, si vive anche senza tahina, ma se possiamo farla in casa allora le cose cambiano no?
Francesca, questa è per te, ecco come si può fare questa salsa di sesamo che dà quel tocco in più all'hummus, che si usa per fare i falafel le famose polpette di fave o come base dell'halva, un dolce di origine asiatica che è entrato nella tradizione ebraica e del bacino del Mediterraneo. Io trovavo l'halva nei negozi di dolci turchi e greci a Londra.
Torniamo ai nostri semi di sesamo e a come semplicemente si può ottenere questa preparazione.
  • 70 g di semi si sesamo bianchi
  • 30 ml (2 cucchiai) di olio di sesamo o anche di semi di girasole
  • sale, opzionale
Fate tostare i semi di sesamo in una padella antiaderente per alcuni minuti facendo attenzione a che non si coloriscano. Appena sentirete l'aroma di sesamo e i semi inizieranno a scoppiettare toglieteli dal fuoco e trasferiteli in un piatto in modo che non continuino a tostare correndo così il rischio che diventino amari.
Fate raffreddare un poco i semi e poi metteteli in un piccolo frullatore, azionate fino a quando e semi formano una crema compatta. Se usate il sale aggiungetene un pizzico ora, aggiungete l'olio, fate andare ancora qualche secondo e la vostra crema tahina è pronta per essere usata o messa in un barattolo e conservata in frigo per circa un mese. 
Più facile di così!

A while ago my friend Francesca asked me where I usually buy my tahini to make hummus as she could not find it anywhere. Usually if we cannot get something easily we tend to think that we can do without it and of course, we can live without tahini, but if we can make it ourselves then why not try?
Francesca this is for you, here's how you can make this sesame creamy sauce that gives an extra kick to hummus, an ingredient used to make the famous falafel patties or used as a base for halva, a sweet of Asian origins which became a staple in Jewish traditional sweet treats and known all over the Mediterranean basin. I used to buy halva in Turkish and Greek pastry shops in London.
Let's go back to our sesame seeds then and how easy it is to make this preparation.
  • 70 g (1/2 cup) of white sesame seeds
  • 30 ml (2 tablespoons) of sesame or sunflower oil
  • salt , optional
Toast the sesame seeds in a non-stick pan for a few minutes, making sure they don’t get brown. As soon as you can smell the typical sesame seeds aroma and some seeds start to pop remove from the heat and transfer them to a plate so they don’t keep on toasting for too long and become bitter.
Let cool a little and then put the seeds in a small blender and blend until the seeds form a thick paste. If you use salt add a pinch now, then add the oil, blend for a few more seconds and your tahina is ready to be used or stored in a jar and kept in the fridge for about a month.
As easy as that!
