Golose Declinazioni - Millefoglie di Verdure e Filetti di Pesce Impanati or Fried Vegetables and Breaded Fish Fillets Stacks

Mentre scorrazzo con la mia bici creo ricette. Le gambe pedalano, mi beo del sole quando c'è e di quello che mi passa accanto, i palazzi antichi del centro, il verde del lungolago e intanto penso a cosa preparerò per pranzo. Cerco di ricordare cosa c'è in frigo, se l'estro creativo me lo suggerisce mi fermo e compro le poche cose che non ho a disposizione, inforco di nuovo la bici e via, verso casa e verso la cucina. Stamani avevo voglia di pesce, così ho preso dei filettini di platessa. Di solito compro qualsiasi pesce che trovo fresco e già sfilettato, non riesco proprio ad affrontare i pesci interi, ma se qualcuno far il lavoro di pulitura e sfilettatura per me sono ben felice di cucinarli. Come preparare questi filettini allora? Pedalo e penso alle verdure che ho a disposizione e mi si presentano un po' di idee, la mente comincia a lavorare e vedo bastoncini di carote e zucchine, forse un involtino...no no, meglio delle fettine sottilissime di melanzane, zucchine e piccole falde di peperone giallo. Il filetto si impana, si, vada per il filetto impanato con l'aggiunta di erbe aromatiche, neanche a dirlo, e poi si friggono sia il pesce che le verdure per dare croccantezza al piatto, si alternano gli ingredienti ed ecco che nascono queste torrette graziose e profumate. Io oggi le ho mangiate come piatto unico, ma se servite una millefoglie a persona può diventare un antipasto carino, se volete qualcosa di più sostanzioso  potete servirne due a testa e accompagnare le millefoglie con del semplice cous cous aromatizzato, provate ad aggiungere un poco di berberé, ottima miscela di spezie tipica dell'Etiopia, oppure della curcuma che dona un bellissimo colore dorato ai cibi con cui viene a contatto. Se volte tenervi più leggeri potete servire come contorno dell'insalata fresca con rondelle di cetriolo e qualche ravanello piccantino, sempre e comunque suggerisco di accompagnare con degli spicchi di limone, che con la sua piacevole nota acidula bilancierà la grassa rotondità del piatto. Se preparate la linea non ci vorrà poi molto a cucinare queste piccole delizie. Basta un poco di organizzazione.
Ecco le dosi per 4 millefoglie:

  • 8 fette sottilissime di melanzana
  • 8 fette sottilissime di zucchino (tagliate in diagonale)
  • 8 fette sottili di peperone giallo, sbucciato
  • 12 piccoli pezzi di filetto di pesce, non più grandi della fetta di melanzana
  • pangrattato
  • erbe aromatiche fresche (io ho utilizzato aneto, prezzemolo e dragoncello)
  • 1 uovo
  • 1 cucchiaio di farina
  • sale
  • pepe
  • olio di semi per friggere
Semplicemente preparate un trito di erbe aromatiche e unitelo al pangrattato con un pizzico di sale e una macinata di pepe. Preparate la farina e l'uovo sbattuto in due ciotole separate e tagliate i filetti di pesce in pezzi non troppo grossi. Infarinateli, poi passateli nell'uovo e infine nel pangrattato aromatizzato. Metteteli da parte. Tagliate le verdure a fette sottili e sbucciate i peperoni. In una padella capiente mettete dell'olio e quando è caldo friggete le verdure, quando sono dorate scolatele su della carta assorbente e passate a friggere il pesce. Scolate anche questo su carta assorbente e passate a comporre il piatto. Mettete una fetta di melanzana sul piatto di portata, sovrapponete un filetto di pesce, due fettine di zucchino, un altro filetto di pesce, due falde di peperone, ancora un filetto di pesce e chiudete con una melanzana. Io ho decorato con dell'aneto e dei fiori di coriandolo. Servite la vostra millefoglie di verdura e pesce quando è ancora tiepida, per apprezzare al meglio i sapori di tutti i componenti del piatto.

While riding my bike I create recipes. The legs pedaling, I bask in the sun and appreciate the delights of what comes by like the ancient buildings of the town centre, the greenery along the lakeshore and all the while I think about what I’ll prepare for lunch. I try to focus on what's in the fridge, if the creative inspiration suggests new ingredients I stop and buy the few things that I need, then back on my bike again and off to the house and into the kitchen. This morning I felt like having fish, so I bought some plaice fillets. I usually buy any fresh fish that has been already filleted, I just cannot deal with a whole fish, but if someone do the work of cleaning and filleting it for me I'm happy to cook it. What to do with these fillets then? While pedalling I think of the vegetables I’ve got, a few ideas spring to my mind, and I see courgette and carrot sticks, maybe a fish roll ... no no, I’d better try with thin slices of aubergine, cougette and small strips of yellow pepper. Breaded fish fillets, let’s go with fillets breaded in aromatic breadcrumbs scented with fresh herbs, needless to say, and then fry both fish and vegetables to give crispness to the dish, alternating the ingredients and here we have these pretty and fragrant towers. Today I had them as a main course, but if you serve one vegetable and fish stack per person it can be a nice starter. If you want something more substantial you may serve two for each person and accompany them witha nice scented couscous, try adding a little berberé, a nice blend of Ethiopian spices, or with a pinch of turmeric that gives a beautiful golden colour to any food that comes into contact with it. If you feel like something lighter you can serve this dish with a green salad with fresh cucumber slices and some spicy radish, I suggest that you always accompany it with lemon wedges, which, with its pleasant sour note will balance the fat roundness of the fried ingredients. If you prepare the line in advance it won’t take long to cook these little delicacies. Be organized and you’ll master this recipe in no time at all. 
Here's the recipe for 4 stacks:
  • 8 thin slices of aubergine
  • 8 thin slices of courgette (cut diagonally)
  • 8 thin slices of yellow pepper, peeled
  • 12 small pieces of fish fillet, no larger than the aubergine slices
  • breadcrumbs
  • fresh herbs (I used dill, parsley and tarragon)
  • 1 egg
  • 1 tablespoon flour
  • salt
  • pepper
  • vegetable oil for frying
Finely chop a mixture of herbs and add it to the breadcrumbs with a pinch of salt and freshly ground pepper. Prepare the flour and beaten egg into two separate bowls, and cut the fish fillets into smallish pieces. Dredge each piece in flour, then dip into the eggs, then in the breadcrumbs. Put them aside. Cut the vegetables into thin slices and peel the peppers. Put some oil in a large pan and when hot fry the vegetables until they are golden, drain on paper towels and fry the fish fillets. Drain on absorbent paper and you’re ready to assemble the dish. Put a slice of aubergine on a serving plate, stack a fish fillet on top of it, then two courgette slices, another fish fillet, a couple of pepper strips, another fish fillet and finally an aubergine slice. I decorated with dill and coriander flowers. Serve your vegetables and fish stacks while it is still warm, to better appreciate the flavours of all the elements of the dish.

  3. Questa ricetta secondo me può competere con uno degli antipasti dei più stellati dei ristoranti.
    Mi salvo subito la ricetta, sono certo che quando la proprorrò mi farà fare un figurone

  4. non hai idea di quanto siamo simili Debora: anche a me le ricette vengo in mente quasi tutte andando in biciletta,mentre i pedali vanno da sè da tanto sono sovra pensiero e il mondo passa senza fretta accanto a me...
