Tanta Dolcezza per Tutti - Crema Pasticcera Senza Glutine con Fragoline di Bosco or Gluten Free Crème Pâtissière with Wild Strawberries

E' arrivata l'estate e con essa l'incubo delle tarme alimentari. Le poche cose che non sono state messe sotto vetro o sigillate in barattoli a prova di tarme devono essere consumate e fra queste c'era della farina di riso. In frigo avevo delle uova biologiche e in giardino una manciata di fragoline. Uno dei miei cugini ricorda che quando eravamo piccoli mia madre ci preparava la crema pasticcera come dessert, con un po' di frutta matura è una dolcezza che dà così tanta soddisfazione da essere ricordata decenni dopo. Dalle stanze della memoria è arrivato fino ad oggi il profumo di quella crema. Ho deciso di provare a farla con la farina di riso e vedere come veniva, a me è piaciuta. Fatta e poi freddata, servita poi con le fragoline di bosco, ma anche con pesche noci a fettine, volendo banane, albicocche, ciliegie, ci vuole frutta succosa e ben matura e l'incantesimo è fatto, si torna bambini.
Per 6 porzioni:
  • 6 tuorli
  • 100-120 g di zucchero semolato
  • 2 cucchiai di farina di riso
  • 500 ml di latte
  • 1 cucchiaino di estratto di vaniglia o una busta di vanillina o qualche striscia di scorza di limone non trattato
Se usate le scorze di limone mettetele in una pentola con il latte. Portate il latte a ebollizione e poi toglietelo dal fuoco. Se usate la vaniglia è il momento di aggiungerla al latte. In una ciotola mettete i tuorli, lo zucchero e mescolate con le fruste elettriche per ottenere un bel composto spumoso e leggero. Aggiungete la farina, mescolate ancora per incorporarla bene ed evitare che si formino grumi, poi versate il latte a filo in modo che le uova non si cuociano. Una volta che tutto il latte è stato incorporato Versate la crema nella pentola dove avevate scaldato il latte e cuocetela a fuoco moderato, mescolando sempre fino a che non si sarà addensata. Versatela in una ciotola, copritela con della pellicola per alimenti facendo attenzione che questa tocchi la superficie della crema, in questo modo eviterete che si formi l'odiosa crosticina e fate freddare la crema. Conservate in frigo. Se dovessero formarsi dei grumi niente paura, una passata con il frullatore a immersione renderà la vostra crema super vellutata.

I decided to try it with the rice flour and see if I liked it. After it’s done it has to cool down, then serve it with wild strawberries, but it also work well with slices of nectarines, or bananas if you wish, still again apricots, cherries, it works with any juicy and ripe fruit. Enjoy and the spell is done, you’re back to childhood.

For 6 servings:
  • 6 organic egg yolks
  • 100-120 g caster sugar
  • 2 tablespoons rice flour
  • 500 ml of milk
  • 1 teaspoon vanilla extract or some strips of organic lemon peel
If you use lemon peel place them in a saucepan with the milk. Bring the milk to a boil and then remove from heat. If you use the vanilla is now the time to add it to the milk. In a bowl, put the egg yolks, sugar and mix with an electric mixer until you get a nice frothy and light mixture. Add the flour, stir to incorporate it well and avoid lumps, then pour the milk little by little so that the eggs don’t curdle. Once all the milk has been incorporated pour the mixture into the pan where you warmed the milk and cook over moderate heat, stirring constantly until it thickens. Pour into a bowl, cover with cling film making sure it touches the surface of the crème pâtissière, in this way you will avoid that the surface becomes hard. Let cool down and keep in the fridge. If there are lumps don’t worry, use the hand blender to make your crème pâtissière super velvety.

  2. Semplice e veloce, ma non stanca mai! Quando mia mamma la faceve ero io l'addetta alla pulizia di pentolini e mestoli! :)
