Esperimenti - Panini al Latte per Hamburger or Milk Buns for Hamburgers

I miei panini per hamburger sono molto buoni, ma secondo Andrea non sono abbastanza morbidi. Il problema con quelli che si comprano è che sono troppo dolci e poco "sostenuti", mentre si cerca di addentare l'hamburger e tutti gli ingredienti che rendono questo panino così sfizioso, il pane si disintegra sotto le dita. Se poi le dita sono quelle di un gigante come mio marito allora il panino deve essere per forza più sostanzioso. Sostanzioso ma morbido. Un bel dilemma. Oggi ho deciso di provare a fare dei paninetti al latte per riuscire a trovare la giusta consistenza. Ne ho assaggiato uno ancora tiepido ed era una bontà! Dorato all'esterno ed con una mollica estremamente morbida. Con la grinta giusta per poter contenere l'esuberanza della succulenta polpetta di carne e dei vari condimenti senza disfarsi. Così vi propongo la ricetta che ho modificato prendendo spunto dal libro "PANE. I segreti per farlo in casa, a macchina e a mano"  edito da Giunti.
Per 6 panini
  • 300 g di farina 00
  • 160 ml di latte tiepido
  • 30 g di burro morbido
  • 25-50 ml di acqua tiepida
  • 1 bustina di lievito di birra disidratato (7 g)
  • 1 cucchiaino di sale
  • 1 cucchiaino di zucchero
  • semi misti (sesamo bianco e nero, papavero, lino, nigella)
Scaldate il latte con lo zucchero e poi aggiungete il lievito. Fate agire per 5 minuti. In una ciotola capiente versate la farina e il burro tagliato a pezzettini, aggiungete il sale e lavorate con le mani fino ad incorporare il burro. Versate il latte nella ciotola e amalgamate alla farina con una spatola. Aggiungete poca acqua fino a quando tutta la farina è incorporata e l'impasto risulterà morbido e malleabile. Versate l'impasto su un piano di lavoro, lavoratelo per 5 minuti fino ad ottenere una palla liscia ed elastica. Ponete l'impasto di nuovo nella ciotola, coprite e fate lievitare per 1 ora.
Rivestite una placca con della carta da forno. Ponete l'impasto lievitato su un piano di lavoro e lavoratelo per sgonfiarlo. Formate un rotolo e suddividetelo in 6 parti. Prendete un pezzo di impasto e schiacciatelo con una mano, ripiegate i lati verso l'interno e cercate di sigillarli verso il centro. Girate la pallina di impasto ottenuta, mettetela sul piano di lavoro, mettete una mano aperta sulla pallina e fatela roteare facendo un po' di pressione con la mano. Seguite questo procedimento per ogni pallina di impasto. Mettete i semini che avrete deciso di utilizzare in un piatto e mescolateli. Spennellate i panini con un goccio d'acqua e passateli sui semini. Posizionate i panini così ottenuti sulla placca,  coprite con un canovaccio e fate lievitare per un'altra ora. Accendete il forno a 200°.   Con una lametta o un coltello affilatissimo praticate delle incisioni sui panini partendo dal centro e andando verso l'esterno. Cuocete per circa 20 minuti, girando la teglia una volta in modo che la doratura sia omogenea. Sfornate e fate freddare su una griglia.

My hamburger buns are very good, but according to Andrea are not soft enough. The problem with bought ones is that they are too sweet and not “supportive” enough. While trying to bite into the burger and all the other ingredients that make this meal so delicious, the bread disintegrates under your fingers. And if the fingers are those of a giant like my husband then the bun has to be more substantial. Substantial but soft. Such a dilemma. Today I decided to make milk buns and try to get the right consistency. I tasted one of the buns, it was still warm and so good! Golden on the outside and with a very soft crumb. With the right consistency to contain the exuberance of the succulent meatball and the various condiments without crumbling . So I make some changes to a recipe I read in the book "PANE. I segreti per farlo in casa, a macchina e a mano" published by Giunti.
For 6 buns
  • 300 g all-purpose flour
  • 160 ml warm milk
  • 30 g soft butter
  • 25-50 ml warm water
  • 1 sachet dried yeast (7 g)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • mixed seeds (black and white sesame seeds, poppy, flax, nigella)
Heat the milk with the sugar until lukewarm then add the yeast and mix. Set it aside for 5 minutes. In a large bowl pour the flour and butter cut into small pieces, add salt and work with your hands until the butter’s been incorporate. Pour the milk into the bowl and mix the flour with a spatula. Add a little water until all the flour is incorporated and the dough will be soft and pliable. Put the dough on a work surface, knead for 5 minutes until you get a smooth and elastic ball. Place the dough back in the bowl, cover and let rise for 1 hour.
Line a oven-tray with parchment paper. Place the dough on a work surface and knead to deflate. Form a roll and divide it into 6. Take a piece of dough and flatten it with you hand, fold the sides inwards and try to seal them towards the center. Turn the ball obtained, put it on the work surface, place an open hand on the ball and make it spin giving a little pressure with your hand. Follow this procedure for each piece of dough. Put the seeds that you have decided to use in a dish and mix. Brush the buns with a little water and press the upper side on the seeds. Place the buns on the oven-tray, cover with a tea towel and let rise for another hour. Preheat the oven to 200°C. With a razor blade or a sharp knife make some slits on the buns’ surface starting from the center and going outwards. Cook for about 20 minutes, turning the pan once so that the buns cook evenly. Remove from the oven and let cool on a rack. These buns are nice and soft even the day after they’re baked.

      Sono piaciuti molto,anche se li abbiamo mangiati con altre cose e non con gli hamburger, li rifarò la prossima settimana e proveremo il combo... :)
