Dolcezze Domenicali - Cestini di Pasta Fillo con Lemon Curd e Fragole or Phillo Pastry Baskets filled with Lemon Curd and Strawberries

Era da un po' che ci pensavo e finalmente, nella calma domenicale, ho realizzato questi cestini golosi. Sono sicura che mille altri ripieni dolci o salati possono rendere speciali questi delicatissimi cestini di pasta fillo, ma la combinazione della dolcezza del lemon curd e l'asprigna delicatezza delle fragole li ha veramente elevati a dessert spettacolare. Belli e buoni, delicati eppure di carattere, con tante sfumature di gusto e consistenze che trasformano i singoli ingredienti in una sinfonia di gusto.
Ecco come si ottengono 8 cestini.
  • 2 fogli di pasta fillo 36 cm x 39 cm
  • 16 cucchiaini di lemon curd
  • una manciata di fragole
  • 2 cucchiaini di zucchero
  • 2 cucchiai di succo di limone
  • 3 cucchiai di burro
Accendete il forno a 180° con l'opzione ventilata. Lavate e tagliate le fragole in piccoli pezzi, aggiungete lo zucchero, il succo di limone, mescolate e mettete da parte. Fate fondere il burro e spennellate una teglia per mini muffins. Spennellate anche i bordi fra un foro e l'altro per evitare che la pasta fillo si attacchi alla teglia.


Stendete i due fogli di pasta fillo sovrapposti, tagliateli in tre parti per il senso della lunghezza e suddividete ogni striscia di pasta ottenuta in 4 parti. Otterrete così 24 quadrati di pasta fillo. 


Spennellate con il burro fuso ogni quadrato di pasta, da entrambi i lati.


Sistemate 3 quadrati di pasta per ogni foro della teglia sfalsandoli.


Infornate per circa 4 minuti fino a che la pasta diventa di un bel colore dorato sui bordi. Sfornate e fate freddare per qualche minuto. 


Girate con delicatezza i cestini di pasta fillo e sistemateli sulla teglia. Infornateli ancora per un paio di minuti in modo che anche le basi possano prendere colore. Sfornate e fate freddare.


Al momento di servirli sistemate i cestini sui piatti di portata e riempite ciascuno con 2 cucchiaini di lemon curd.


Aggiungete le fragole e servite.

I’ve been thinking about it for a while and finally, in the calm of a Sunday morning, I made these delectable baskets. I'm sure many other sweet or savoury fillings can be used to transform these delicate fillo baskets into something special, but the combination of the sweet lemon curd with the freshness of strawberries brought this dessert to a higher level. It becomes such spectacular treat! Beautiful and good, delicate yet with character, with many shades of tastes and textures that transform the individual ingredients in a symphony of flavours.Here's how you get 8 baskets.
 
• 2 sheets of fillo pastry 36 cm x 39 cm
• 16 teaspoons of lemon curd
• a handful of strawberries
• 2 teaspoons of sugar
• 2 tablespoons lemon juice
• 3 tablespoons butter

Preheat the oven to 180 ° fan. Wash the strawberries and slice into small pieces, add sugar, lemon juice, stir and set aside.Melt the butter and brush a mini muffins tray with it not forgetting the edges between the holes to prevent the fillo pastry from sticking to the pan.



Roll out the two sheets of fillo pastry stacked, cut into three parts lengthwise and cut again each strip of pastry into 4 parts. This will give you 24 squares of fillo pastry.


Brush each square on both sides with melted butter.


Place 3 squares of pastry in each hole offsetting the corners.


Bake for about 4 minutes or until the dough becomes golden brown on the edges. Remove from the oven and let cool for a few minutes.


Turn gently the fillo baskets and arrange on baking sheet. Bake again for a couple of minutes so that even the base of the baskets will turn golden brown. Remove from the oven and let cool.


Just before serving arrange the baskets on a serving dish and fill each with 2 teaspoons of lemon curd.


Add the strawberries and serve.

    1. Io l'ho scoperta tanti anni fa attraverso un'amica/coinquilina bosniaca che preparava una torta salata con spinaci, feta e altre bontà racchiuse in un guscio di pasta fillo. Non l'ho più abbandonata anche se, una volta tornata in Italia, ho sempre fatto fatica a trovarla. Non va molto da queste parti ed è abbastanza difficile da fare in casa anche se magari un giorno di proverò! :)
