Finocchi e Bietoline Gratinati or Fennels and Swiss Chard Gratin

I finocchi gratinati sono una delle mie passioni per quanto riguarda le verdure. Andrea ama i finocchio solo crudi, possibilmente non mescolati ad altre verdure, conditi con olio extravergine, un pizzico di sale e tanto pepe nero. Così per pigrizia non cucino mai questa verdura che adoro e che anche così, a crudo, ha un sapore delizioso e fresco. Niente a che fare con la delicatezza confortante del finocchio cotto però, Devo dire che anche solo lessato e condito mi piace moltissimo, il profumo di anice che lo contraddistingue si smorza e la consistenza diventa quasi cremosa. L'apoteosi però è la gratinatura. Fino a qualche Natale fa la nonna di Andrea li proponeva come contorno passati al forno, rivestiti di una leggera panatura che le rendeva speciali, dovrò farmi dare la ricetta...
Io oggi li propongo insieme a delle bietoline del mio orto in vaso, avvolti da una salsa al formaggio profumata di senape, una delizia immensa. Pensate che questo è stato il mio pranzo, così senza niente altro.

Contorno per 4 persone:

2 cucchiai di farina
sale
pepe
noce moscata
350 ml latte
130 g gouda grattugiato
1 cucchiaino colmo di senape dolce
1 finocchio
1 manciata di bietoline giovani

Tagliate il finocchio a spicchi e staccate i gambi dalle bietole. Cuocete vapore per 10 minuti circa sia i finocchi che i gambi di bietole poi aggiungete le foglie delle bietole e fate appassire per un paio di minuti.
In una piccola pentola dal fondo spesso mettete la farina, un pizzico di sale, il pepe e una grattugiata di noce moscata. Aggiungete a filo il latte e mescolate con una frusta in modo da amalgamare bene il tutto e mettete sul fuoco.
Fate cuocere fino a che il composto comincia a bollire e si addensa avendo cura di mescolare sempre con un cucchiaio di legno. Una volta che la salsa si sarà addensata, fate cuocere per 5 minuti a fuoco basso e iniziate ad aggiungere il formaggio mescolando bene per fare in modo che si sciolga. Tenete da parte una manciata di formaggio per la gratinatura. Quando il formaggio si sarà sciolto e la salsa sarà omogenea aggiungete la senape e mescolate.
Accendete il grill al massimo.
Mettete un paio di cucchiai di salsa sul fondo di una terrina, adagiateci sopra i finocchi e per ultimo le bietoline. Cospargete con la salsa e per ultimo con il formaggio grattugiato che avevate tenuto da parte. Mettete la terrina sotto il grill per circa 6-8 minuti o fino a che la superficie sarà ben dorata.

Fennel gratin is one of my passions when talking about vegetables dishes. Andrea loves his fennel raw, possibly not mixed with other vegetables, and dressed with extra virgin olive oil, a pinch of salt and plenty of black pepper. That is my excuse and so I rarely cook this vegetable, I must say that I love raw fennels, they tastes delicious and fresh. Nothing to do with the delicacy and comfort of the cooked fennel though. I must say that I like it better even just boiled and seasoned as its aniseed scent fades a little and the fennel becomes of an almost creamy consistency. The best way to serve it, however, is making a gratin. Until a few Christmas ago Andrea's grandmother served fennels as a side dish baked in the oven, covered with a light bread coating that made them special, I'll have to ask for the recipe ...
Today I suggest this lovely recipe, fennels and the Swiss chard from my potted veggie garden, all these lovely veggies coated in a mustardy cheese sauce scented, such an immense delight. I had this dish for lunch, and nothing else! 

For 4 servings as a side:

  • 2 tablespoons flour
  • salt
  • pepper
  • nutmeg
  • 350 ml milk
  • 130 g grated Gouda cheese or Cheddar
  • 1 heaping tablespoon of mild mustard
  • 1 fennel bulb
  • 1 handful of young Swiss Chard leaves
Cut the fennel into wedges and pull the stems from the Swiss chard. Steam for about 10 minutes the fennel and Swiss chard stalks, then add the chard leaves and let cook for a few minutes.
Add the flour, a pinch of salt, pepper and grated nutmeg to a small thick-bottomed pan. Pour in the milk and stir with a whisk to mix well then put on the heat.
Cook until the mixture begins to boil and thickens, always stirring with a wooden spoon. Once the sauce has thickened, cook for 5 minutes over low heat and start adding the cheese stirring well to make sure it melts. Set aside a handful of cheese for later. When the cheese has melted and the sauce is smooth, add the mustard and stir.
Preheat the grill to its highest setting.
Put a couple of tablespoons of sauce on the bottom of an oven dish, arrange the fennel wedges and Swiss chard over it. Pour the rest of the sauce and top with the reserved cheese. Put the dish under the grill for about 6-8 minutes or until the surface is bubbling and becomes golden brown.
