Leggerezza...o Quasi - La Salsa Olandese Facile or Hollandaise Sauce the Easy Way.

In questi giorni di canicola estiva ho quasi abbandonato la cucina per motivi di sopravvivenza. Insalatone, paste veloci veloci, pranzi freddi e dissetanti a base di melone, cocomero, formaggi freschi. Oggi però ho voluto trattarmi bene e ho deciso di preparare delle uova affogate con contorno di fagiolini al vapore. E questo lo chiami trattarsi bene direte voi? Eh si, perché ad accompagnare questi cibi semplici ho preparato una deliziosa salsa olandese. In 2 minuti, con il frullatore a immersione, si ottiene una salsa vellutata e saporitissima, per condire ad esempio le famose uova alla Benedict, per accompagnare asparagi, altre verdure cotte semplicemente a vapore, per esaltare filettini di pesce cotti per pochi minuti, insomma, gli usi sono molti, non ultimo, se non fosse per l'alto contenuto di burro che mi fa desistere, a cucchiaiate su fette di pane fragrante. Una golosità immensa!
 
Per una quantità di salsa per 2-3 persone:
2 tuorli di uova medie
1/2 cucchiaio di acqua calda
1/2 cucchiaio di succo di limone
1/4 di cucchiaino di sale marino fino
60 g di burro
 
Fate fondere il burro fino a che inizia a spumeggiare. Mettete i tuorli, l'acqua, il succo di limone e il sale nel bicchiere del frullatore a immersione e frullate fino a che il composto diventa un po' spumoso, circa 1 minuto. Aggiungete a filo il burro, sempre avendo il frullatore acceso ed emulsionate.
Fatto.
Niente di più semplice.

During this first summer heat wave, I almost abandoned the kitchen for my own survival. Salads, fast pasta dishes, cool and refreshing lunches made of melon, watermelon and fresh cheeses It’s all I had. Today, however, I wanted to treat myself with something nice and I decided to prepare poached eggs with a side of steamed green beans. And you’d call that a treat? I hear you say. Oh yes, because these simple food will be served with a delicious hollandaise sauce I just make. In 2 minutes, with the hand blender, you get a smooth and tasty sauce that can be used to dress the famous eggs Benedict, or to go with asparagus, or other steamed vegetables, or again to enhance simple fish fillets. It can be served in many other ways, not least, if it just weren’t for the high content of butter that makes me desist, by the spoonful over slices of bread fragrant. Such a delectable treat!

For an amount of sauce for 2-3 people:

2 medium egg yolks
1/2 tablespoon hot water
1/2 tablespoon of lemon juice
1/4 teaspoon fine sea salt
60 g of butter

Melt the butter until it begins to foam. Put the egg yolks, water, lemon juice and salt into the glass of stick blender and blend until the mixture becomes a a little frothy, about 1 minute. Add the butter little by little in stream, and keep blending until emulsified.
Done.
Nothing could be easier.
