La Pasta al Forno - Conchiglioni Ripieni di Ricotta e Spinaci in Salsa Bianca al Formaggio or Pasta Shells Filled with Spinach and Ricotta Cheese with White Sauce

Per tutti quelli che vogliono festeggiare la fine di questo anno senza carne ma non vogliono rinunciare al gusto ecco un primo piatto da leccarsi i baffi. Da servire in ciotole monoporzione come ho fatto io oppure da condividere se presentato in una bella teglia di ceramica questo è un piatto che accontenterà tutti. Il contrasto con il ripieno asciutto e saporito della pasta e la cremosità della salsa è piacevolissimo e le note speziate della noce moscata e del pepe eleveranno questo piatto a prelibatezza. Fra l'altro è un piatto che si adatta ai gusti di tutti per quanto riguarda la scelta e la quantità di formaggi da utilizzare per la salsa siano essi una spolverata di grana o un bel quantitativo di formaggio sostanziosi o dal sapore robusto come pecorini, formaggi erborinati o affumicati come scamorze o ancora piccanti come certe ottime provole.

Per due porzioni come piatto unico:
  • 18-20 conchiglioni
  • 500 g di ricotta
  • 500 g di spinaci surgelati
  • 100 g di grana grattugiato
  • 100 g circa di Emmentaler, Gouda o di formaggio a vostra scelta grattugiato
  • sale
  • pepe
  • noce moscata
  • 250 ml di besciamella
  • qualche cucchiaio di latte
  • 1 noce di burro

Scongelate gli spinaci a vapore poi strizzateli e quando sono tiepidi tritateli. Metteteli in una ciotola con la ricotta, un po' di noce moscata grattugiata, sale e pepe e mescolate per amalgamare bene.
Cuocete i conchiglioni al dente, scolateli e passateli sotto l'acqua fredda per fermare la cottura. Sistemateli su un telo pulito e accendete il forno a 200°C.
Scaldate la besciamella allungandola con 2-3 cucchiai di latte e quando è calda aggiungete il formaggio che avrete scelto e mescolate fino a che sarà sciolto.
Riempite i conchiglioni con il composto di ricotta e spinaci, sistemateli dentro delle pirofile  appena unte di burro, poi ricopriteli con la besciamella, cospargeteli di grana e mettete in forno a gratinare per circa 15-20 minuti o fino a che la superficie non sarà dorata e la salsa bollirà.
Sfornate, fate raffreddare qualche minuto e servite.

For all those who want to celebrate the end of this year vegetarian style but don’t want to compromise in taste, here is a mouth-watering first course. Serve it in individual bowls as I did, or share it by presenting it in a beautiful ceramic baking dish. This is a dish that will satisfy everyone. The contrast between the thick and tasty filling and the creaminess of the sauce is very pleasant and the spicy notes of nutmeg and pepper elevate this dish to a higher level. Among other things, it is a dish that suits the tastes of everybody as for the choice and amount of cheese to use for the sauce. It can be a sprinkling of parmesan cheese or a nice amount of substantial or robust flavoured sheep cheese, blue cheese or smoked scamorza or even some hot excellent provole.
For two servings as a main dish:
 
  • 18-20 jumbo pasta shells
  • 500 g ricotta
  • 500 g of frozen spinach
  • 100 g of grated parmesan
  • About 100 g of Emmentaler, Gouda or grated cheese of your choice
  • salt
  • pepper
  • nutmeg
  • 250 ml of béchamel sauce
  • a few tablespoons of milk
  • 1 knob of butter
 
Thaw the spinach by steaming them, then squeeze them and when they are lukewarm chop finely. Put them in a bowl with the ricotta, a little grated nutmeg, salt and pepper and stir well to mix.
Cook the pasta shells al dente, drain and cool them under cold water. Place them on a clean cloth and turn the oven to 200° C.
Heat the béchamel sauce and thin it with 2-3 tablespoons of milk, and when hot add the cheese you have chosen and stir until melted.
Fill the pasta shells with the ricotta and spinach mixture, arrange them in the ramekins lightly greased with butter, then cover with the béchamel sauce, sprinkle with parmesan cheese and bake for about 15-20 minutes or until the surface is golden and the sauce is boiling.
Remove from the oven, let cool for a few minutes and serve.
