Ho visto qualche immagine di brioche superbamente decorate e ho voluto provare a farne una. Adoro l'impasto ricco della brioche, mi piace fragrante e tiepido quando è uscito da poco dal forno e mi piace tostato a colazione la mattina. Questa gran brioche fa proprio il caso mio. Quella che non verrà mangiata subito diventerà un golosissimo french toast nei giorni a venire.
Che colazioni che mi aspettano!
Devo ancora lavorare sull'aspetto, magari dovevo partire da un disegno più semplice, ma  le foto che ho visto sono corredate di scritte in russo e il traduttore di Google non è che capisca il russo molto più di me...
Ho usato una ricetta per brioche che ho trovato su "Artisan Bread 5 minutes a Day" adattandola e poi sono andata un po' a naso. Il risultato è buonissimo, profumato e morbido, ma la decorazione non è precisissima. Dovrò lavorarci, forse il mio impasto non era abbastanza compatto, ma chi se ne importa, un pizzico di imperfezione fa molto "fatto in casa" e con tutta la finzione che c'è dietro certe foto di cibo sono molto orgogliosa dei miei risultati!
Se anche voi vi sentite pronti per sfornare una buonissima brioche imperfetta ecco come si fa.
Per la brioche:
  • 180 ml di acqua tiepida
  • 1 cucchiaino di lievito di birra essiccato granulare
  • 4 uova, leggermente sbattute
  • 60 ml di miele d'acacia o millefiori
  • 170 g di burro fuso, più un cucchiaino per spennellate la teglia
  • 480 g di farina 0, più un po' per la spianatoia
  • 1 cucchiaino di sale
Per la farcitura:
  • 50 g di burro fuso
  • 100 g di zucchero di canna
  • 1 pizzico di cannella
Per la glassatura:
  • 1 uovo sbattuto con 1 cucchiaio di acqua
Mettete l'acqua in una ciotola molto capiente e aggiungete il lievito, le uova, il miele e il burro. Mescolate bene con un cucchiaio di legno poi aggiungete la farina, il sale e incorporate. L'impasto sarà morbido e tutta la farina dovrà essere stata assorbita. Chiudete la ciotola con un coperchio o della pellicola e fate lievitare a temperatura ambiente per circa 2 ore poi mettete la ciotola in frigo per almeno altre 2 ore prima di utilizzarla. 
Passato il tempo di riposo in frigo fate sciogliere il burro per la farcitura quindi aggiungete lo zucchero e la cannella. Suddividete l'impasto in 4 parti e spianatele una alla volta su una superficie di lavoro leggermente infarinata formando dei dischi di circa 1/2 cm di spessore. Spennellate ogni disco con un poco di burro e zucchero e sovrapponeteli. Non spennellate con il composto di burro la superficie dell'ultimo disco.
 
 
Io a questo punto io ho preso in prestito la maestria di una signora russa le cui brioches sono capolavori e ho seguito un suo disegno per fare una bella brioche decorata.
Dopo aver dato la forma alla brioche spennellatela con l'uovo sbattuto con l'acqua e copritela con della pellicola. Fate lievitare per circa 1 ora e 1/2 e cuocete in forno a 180° per 35-40 minuti.
Fate intiepidire su una griglia prima di servire.

 I saw some pictures of superbly decorated brioche and wanted to try to make one. I love the rich brioche dough, I like it fragrant and warm just out of the oven, and I like toasted for breakfast in the morning. This large brioche is just what I was looking for. The leftover will become luscious French toasts in the days to come.
I can see fantastic breakfasts ni the near future!
I must admit I still have to work on the appearance of my brioche, maybe I should have started from a simpler design, also the photos I've seen for the design were followed by what I thought were some kind of explanations written in Russian and Google translator is not much better than me at Russian...
For the dough I adapted a recipe from the book "Artisan Bread 5 Minutes a Day" and then I improvised. The result is a delicious, fragrant and soft brioche, but the shape is not very accurate. I'll have to work on it, maybe my dough was a bit too lose, but who cares, a bit of imperfection screams " home-made " in a good way, and with all those photoshopped food photos I feel very proud of my results!
If you feel ready to make a delicious yet imperfect brioche here's how you do it.
For the brioche:
  • 180 ml ​​ warm water
  • 1 teaspoon granulated yeast
  • 4 eggs, lightly beaten
  • 60 ml acacia or wildflower honey
  • 170 g melted butter, plus a teaspoon for the pan
  • 480 g all purpose flour, plus a little for the work surface
  • 1 teaspoon salt
For the filling:
  • 50 g butter, melted
  • 100 g of sugar cane
  • 1 pinch of cinnamon
For the egg wash:
  • 1 egg beaten with 1 tablespoon water
Put the water in a large bowl and add the yeast, eggs, honey and butter. Mix well with a wooden spoon, then add the flour, salt and stir until all the ingredients have been incorporated. The dough will be soft. Cover the bowl with a lid or plastic wrap, and let rise at room temperature for about 2 hours, then put the bowl in the fridge for at least 2 more hours before using.
After the dough has rested in the fridge, melt the butter for the topping and add the sugar and cinnamon. Divide the dough into 4 parts and roll them one at a time on a lightly floured work surface making 1/2 cm thick discs. Brush each disc with a little butter and sugar mix and put one on top of the other. Do not brush with the butter mixture the surface of the last disc.
I at this point I have relied on the mastery of a Russian lady whose brioches are masterpieces, and I followed her designed to try and make a nicely decorated brioche.
After giving shape to the brioche brush it with the egg wash, and cover it loosely with plastic wrap. Then let it rise for about 1 ½ hours in a 180°C oven for about 35-40 minutes.
Let cool on a wire rack before serving.

      Questa brioche era talmente buona che non sono neppure riuscita a farci il french toast come da mio intento. Gli ultimi giorni l'ho solo tostata un po' ed era favolosa...
