Per Riscaldare - Minestrone con Fiori di Zucca e Quinoa Rossa e Bianca or Mixed Vegetable Soup with Squash Blossoms and Red and White Quinoa

In questi giorni piovosi di primavera sento il bisogno di mangiare cose calde e salutari. Così ho preparato una ciotola di quinoa cotta che tengo in frigo e quando torno a casa non devo far altro che aggiungerla al piatto che ho scelto di preparare/scaldare, per avere il pranzo pronto in poco tempo e non finire a mangiare i soliti, buonissimi ma non troppo salutari, tranci di pizza da forno, fette di erbazzone, triangoli di focaccia farciti con verdure e salumi o fette di pane rustico spalmate di formaggio fresco.
La quinoa è facile da preparare e si abbina a piatti caldi e freddi, a seconda della stagione, la uso per fare ottime polpette, un delizioso tortino con salmone e in questi giorni l'ho servita con questo minestrone che mi ha aiutata a scacciare il freddo e il malumore.
La ricetta per questo minestrone è assolutamente adattabile alla verdura che più vi piace e che avete a disposizione, io ho usato un mix di verdure e legumi più un barattolino di fiori di zucca soffritti con della cipolla che mia mamma aveva congelato.
Ne è risultato un piatto molto gustoso che ho servito con un giro d'olio e del peperoncino chipotle affumicato che adoro.
Provate la vostra versione, la mia è stata fatta così:
Per 4/5 porzioni
Per la quinoa:
  • 1 tazza (240 ml) di quinoa rossa e bianca
  • 500 ml di acqua fredda
Per il minestrone:
  • 1 chilo di verdure miste fresche o congelate (io ho usato patate, pomodori, zucchine, carote, sedano, cavolo verza, piselli, fagioli borlotti, fagiolini, porri, zucca)
  • qualche foglia di basilico
  • qualche rametto di prezzemolo
  • 1 spicchio d'aglio
  • qualche fiore di zucca
  • 1/2 cipolla bianca
  • 1 dado vegetale biologico
  • 1 cucchiaio di curcuma in polvere
  • sale marino fino
  • pepe
  • olio extravergine d'oliva e peperoncino chipotle in polvere, per servire
Pulite e tagliate la verdura a tocchetti, mettetela in una pentola capiente, copritela con 1 litro di acqua bollente, aggiungete il dado sbriciolato, la curcuma, l'aglio e le erbe aromatiche e portate a ebollizione. Abbassate la fiamma e fate cuocere per circa 30 minuti o fino a che la verdura è cotta.
Nel frattempo soffriggete la cipolla in poco olio e quando è morbida aggiungete i fiori di zucca tagliati grossolanamente, fate cuocere per un paio di minuti e togliete dal fuoco.
Lavate la quinoa sciacquandola bene sotto acqua correte poi mettetela in una pentola con l'acqua fredda e un pizzico di sale. Portate a ebollizione coperta e poi abbassate la fiamma e fate sobbollire per circa 15 minuti o fino a quando tutta l'acqua è evaporata e i chicchi di quinoa hanno una specie di anello bianco intorno. Togliete dal fuoco e fate raffreddare sgranando la quinoa con una forchetta.
Quando la verdura del minestrone è cotta frullatela con un frullatore a immersione.
Mettete un paio di cucchiai colmi di quinoa in un piatto fondo, versateci sopra la crema di verdure, un po' di fiori di zucca e mescolate.
Finite il piatto con un giro d'olio e peperoncino e servite.

It’s been raining a lot in the last few days and I’ve felt the need to eat healthy comforting food. So I cooked some quinoa and stored it in the fridge. When I get home I only have to add it to the dish I chose to prepare or reheat, to have lunch ready in no time instead of eating the same, very good but not so healthy, pizza slice from the bakery, slices of mixed greens pies, triangles focaccia stuffed with vegetables and cold cuts or slices of rustic bread smeared with fresh cheese.
Quinoa is easy to make and can be added to lots of hot and cold dishes, depending on the season. I use it to make excellent meatballs, a delicious pie with salmon and these days I served it with this minestrone that helped me to keep the cold and the bad mood at bay.
The recipe for this minestrone is absolutely adaptable to the vegetables you like and you have at hand. I used a mix of vegetables and legumes plus some squash blossoms cooked with onions that were stored in my mum’s freezer.
It turned out to be a very tasty dish that I served with a drizzle of extra virgin olive oil, and a pinch of smoked chipotle chili.
Try your own version, mine was done this way:
For 4/5 portions
For the quinoa:
  • 1 cup (240 ml) of red and white quinoa
  • 2 cups (500 ml) of cold water
For the minestrone soup:
  • 1 pound of fresh or frozen mixed vegetables (I used potatoes, tomatoes, courgettes, carrots, celery, Savoy cabbage, peas, borlotti beans, green beans, leeks, pumpkin)
  • some basil leaves
  • some sprigs of parsley
  • 1 clove of garlic
  • some squash blossoms
  • 1/2 white onion
  • 1 organic vegetable stock cube
  • 1 tablespoon of turmeric powder
  • fine sea salt
  • black pepper
  • extra virgin olive oil and chipotle chili powder, to serve
Clean and dice the vegetables, put them in a large pot, pour over a litre of hot water, add the crumbled stock cube, the turmeric, the garlic clove, the fresh herbs and bring to a boil. Lower the flame and cook for about 30 minutes or until the vegetables are cooked.
In the meantime, fry the onion in a little oil and when it is soft add the squash blossoms cut roughly, cook for a couple of minutes and remove from the fire.
Thoroughly rinse the quinoa under running water then put it in a pot with cold water and a pinch of salt. Bring to a boil covered, then lower the flame and simmer for about 15 minutes or until all the water has been absorbed and the quinoa grains have a kind of white ring around them. Remove from the heat and cool, then fluff the quinoa with a fork.
When the vegetables are cooked blend them with an immersion blender.
Put a couple of heaped tablespoons of quinoa in a dish, pour over the creamy vegetable soup, a few squash blossoms and mix.
Finish the dish with a drizzle of oil and sprinkle with chili then serve.
