Il Cartoccio delle Meraviglie - Pesce & Verdure or Almost Barbecued Fish & Mixed Veggies

Oggi ho deciso di provare una nuova tecnica di cottura: il cartoccio sulla griglia. Perché questa estrosità? Perché a me piace il pesce, ad Andrea no e quindi i barbecue qui sono sempre e solo di carne (e verdura). Con il cartoccio però potrei ovviare alla contaminazione della griglia e mi potrei sbizzarrire con del pesce. Oggi provo sulla griglia scaldata sui fornelli, se funziona ecco che ho trovato un modo per poter diversificare il menù dell'estate per le grigliate!
In più questo può essere un modo per cucinare in maniera sana, e il cartoccio è un metodo di cottura salutare, senza dover accendere il forno, un bonus notevole in questi giorni di canicola.
Ho aperto il frigo e nel reparto verdure ho preso quanto segue:
  • 1 zucchinotto di medie dimensioni
  • 1 carota
  • 2 scalogni
  • mezza cipolla bianca
  • mezzo limone
  • una manciata di pomodorini
  • 1 trancio di pesce
  • 1 piccolo spicchio d'aglio
Sul balcone ho tagliato qualche rametto di timo, del prezzemolo, basilico e dragoncello un po' di rosmarino e ho tritato grossolanamente queste erbe aromatiche.
Ho tagliato le verdure a tocchetti, e le ho adagiate su della carta da forno poggiata su un doppio strato di alluminio


Ho cosparso di sale, pepe, metà delle erbe aromatiche tritate e condito con un giro d'olio extra vergine.


Ho adagiato il trancio di pesce sulle verdure, ho aggiunto le erbette rimanenti, il limone, ancora una presa di sale e una macinata di pepe nero, un filo d'olio e ho chiuso il cartoccio.


Nel frattempo ho messo a scaldare una bistecchiera di ferro sul fornello più grande e dopo circa 5 minuti questa base per la cottura era pronta. Ho appoggiato il cartoccio sulla bistecchiera e ho fatto cuocere per 15 minuti.
A temperatura medio/alta il cartoccio si arroventa e sfrigola, non esce molto l'aroma, e questo è un bene, così in casa non rimangono tracce del "cibo proibito".
Mi sono fatta un pranzetto pieno di sapore, le verdure sono cotte a puntino e così il pesce che rimane succulento e morbido, niente a che vedere con quelle tristi e stopposette bistecche di pesce fatte in padella. Sono molto soddisfatta del risultato, temevo che le verdure sul fondo si bruciassero ma non è successo, la prossima volta che facciamo un barbecue sperimenterò la cottura sul carboni certa che sarà un successo!

I decided to try a new cooking technique by putting some fish and veggies in a parcel and cooked them in a heavy skillet on the hob. Why this eccentricity? I like fish, my husband hates it therefore barbecues here around are always about meat (and vegetables). Also cooking the fish in a parcel would contain the smell, I could have fish whenever I wanted and in summertime is great not to have to melt in a kitchen with the oven on. I am very satisfied with the result, I was a bit afraid that the vegetables at the bottom would be a bit overcooked if not burnt, but they were great.
Here is what I used to make this delectable parcel: 
 
  • 1 medium-sized courgette
  • 1 carrot
  • 2 shallots
  • half a white onion
  • half a lemon
  • a handful of cherry tomatoes
  • a slice of your favourite fish
  • 1 small clove of garlic
  • a few sprigs of thyme, parsley, basil, tarragon and rosemary
  • extra virgin olive oil
  • salt
  • pepper 
 
Coarsely chop the herbs.
Cut the vegetables into small pieces, and scatted over a sheet of the baking paper placed on a double layer of aluminium foil.
Sprinkle with salt, pepper, half of the chopped herbs and dribble with olive oil. Lay the fish on the vegetables, add the remaining herbs, the lemon cut in wedges, a pinch of salt and freshly ground black pepper, a little olive oil and close the parcel.
In the meantime, heat the pan on the hob and after about 5 minutes on full whack it should be ready.
Put the parcel on the griddle and cook for 15 minutes on medium-high heat. The parcel will become red-hot and you should here a sizzling noise coming from the inside.
After 15 minutes carefully open the parcel, mind the steam and try to pierce the vegetables that should be cooked to perfection and the fish should be succulent and not dry as sometimes is when cooked directly in a pan.
