Novembre - Muffin di Zucca e Spezie con Variante al Cioccolato or Butternut Squash Muffins and a Chocolate Variation

Mi era avanzato un pezzo di zucca butternut squash e ho pensato di fare dei muffin per rimpiazzare una promessa di castagne perché molte si son rivelate essere abitate da "bachetti" bianchi e cicciotti. Le castagne arrivavano dalla Toscana, raccolte dalla sorella n.3 che abita in mezzo al bosco, come le fate, e che ha a disposizione le prelibatezze della natura sulla soglia di casa. Le avevo messe a seccare in garage e le avevo controllate ben bene ma qualche larva deve essermi sfuggita e così sono state contaminate velocemente, lasciandone poche integre. Le ho portate comunque alle cena di ieri sera perché il loro sapore è ottimo, quando non sono abitate da ospiti indesiderati, piccole e tondette, un concentrato do dolcezza. Le abbiamo cotte sui fornelli casa con la padella bucherellata. Abbiamo sporcato un po', questo è innegabile ma il sapore dell'autunno racchiuso nelle castagne è impagabile. Comunque, per tornare ai muffin, visto che le castagne non erano tantissime ho pensato di portare anche un dolcetto. Da un po' volevo provare i muffin con la zucca ed ecco che l'occasione si è presentata. Ho preso la ricetta da un vecchio libro della Demetra intitolato "Muffins & Dolcetti Americani". Ho modificato un po' la ricetta "Muffins speziati alla zucca" e ho anche preparato una versione al cioccolato per chi proprio la zucca in un dolce non se la sentiva di affrontarla. Ho dimezzato le dosi e quindi ho preparato 6 muffin alla zucca e 6 alla zucca al cioccolato. Ho aggiunto delle pepite di cioccolato fondente in entrambe le preparazioni per un tocco di decadenza e devo dire che sono passati a pieni voti, anche dopo un lauto antipasto a base di salumi e tortilla chips con un'ottima salsa piccante preparata dai padroni di casa, una bella pizza e le famigerate castagne.
Ecco la mia ricetta per 6 muffin alla zucca e 6 alla zucca e cioccolato.
 
Per i muffin di zucca:
  • 110 g di farina 00
  • 65 g di zucchero di canna moscovado scuro
  • 35 g di zucchero semolato
  • 1/4 di cucchiaino di sale
  • 1/4 di cucchiaino di mixed spice
  • 1/8 di cucchiaino di bicarbonato di sodio
  • 1/2 cucchiaio di lievito per dolci
  • 55 g di burro ammorbidito
  • 60 g di purea di zucca butternut squash
  • 35 ml di latte
  • 5 ml di aceto di vino bianco
  • 1 uovo
  • 50 g di cioccolato fondente
 
Scaldate il forno a 200°.
Per prima cosa sbucciate la zucca, tagliatela a tocchetti e cuocetela a vapore fino a che risulterà morbida. Dovrebbero volerci circa 10 minuti. Schiacciate la zucca con una forchetta e se è troppo acquosa mettetela in una pentola dal fondo spesso e fatela asciugare per qualche minuto. Mescolate il latte e l'aceto e lasciate riposare per 10 minuti. Tritate il cioccolato fondente grossolanamente. In una ciotola capiente mescolate la farina, lo zucchero di canna, lo zucchero semolato, le spezie, il sale e il bicarbonato. Mescolate bene per amalgamare tutti gli ingredienti. In un'altra ciotola sbattete leggermente l'uovo poi aggiungete il burro e il latte con l'aceto e la zucca, mescolate e poi versate negli ingredienti secchi, incorporate velocemente usando un cucchiaio grande aggiungete le scaglie di cioccolato fondente e mescolate brevemente. Il segreto per avere dei muffin buoni e leggeri sta nel non mescolare troppo il composto. Una volta pronto versate il composto ottenuto in 6 stampini per muffin ricoperti con i pirottini di carta. Io ho usato stampi di silicone che non devono essere imburrati. Cuocete i muffin per circa 20 minuti e fate la prova stecchino per controllare che siano cotti all'interno. Sfornate e dopo pochi minuti toglieteli dallo stampo facendoli freddare su una griglia da pasticcere.

  • 65 g di zucchero di canna moscovado scuro
  • 35 g di zucchero semolato
  • 1/4 di cucchiaino di sale
  • 1/4 di cucchiaino di mixed spice
  • 1/8 di cucchiaino di bicarbonato di sodio
  • 1/2 cucchiaio di lievito per dolci
  • 55 g di burro ammorbidito
  • 60 g di purea di zucca butternut squash
  • 35 ml di latte
  • 5 ml di aceto di vino bianco
  • 1 uovo
  • 50 g di cioccolato fondente

I had some leftover butternut squash and thought I'd make some muffins to replace a promise of chestnuts because a lot of the chestnuts I wanted to bring to my friends were inhabited by chubby, white worms. The chestnuts came from Tuscany, collected by sister number 3 who lives in the woods , like the fairies, and she has many of nature’s delights on her very doorstep. I dried the chestnut in the garage and I checked them carefully but I must have missed some larva and so many other chestnuts were contaminated quickly, leaving just a few handfuls intact. I brought the remaining ones to the dinner last night because they taste fantastic when not inhabited by unwanted guests. These chestnuts are small and round, a concentrate of sweetness. We cooked them on the stove using a special pan with holes on the bottom. We made a little mess on the stove, this is undeniable, but the autumn taste of chestnuts is priceless. Anyway, back to the muffins, given that the chestnuts were not many I thought I'd bring along a treat. For some time I wanted to try the pumpkin muffins and this was the perfect opportunity. I got the recipe from an old book edited by Demeter titled " Muffins & other American little cakes". I changed a little the recipe for the " Spicy Pumpkin Muffins " and I also prepared a chocolate version for those who just didn’t want to deal with pumpkin in a cake. I halved the dose and then I made 6 pumpkin muffins and 6 pumpkin and chocolate ones. I added some dark chocolate nuggets in both recipes for a touch of decadence and I must say both versions were really appreciated, even after a hearty starter made of great salami and cold cuts, and tortilla chips with a spicy sauce prepared by the hosts, a nice pizza and the infamous chestnuts.Here is my recipe for 6 pumpkin muffins and 6 pumpkin and chocolate muffins.  
For the pumpkin muffins:
  • 110 g flour 00
  • 65 g of dark brown moscovado sugar
  • 35 g caster sugar
  • 1/4 teaspoon salt
  • 1/4 tsp mixed spice
  • 1/8 teaspoon baking soda
  • 1/2 tablespoon baking powder
  • 55 g butter, softened
  • 60 g of butternut squash puree
  • 35 ml of milk
  • 5 ml of white wine vinegar
  • 1 egg
  • 50 g of dark chocolate
 
Preheat the oven to 200 degrees.
Peel the pumpkin, cut it into small pieces and steam it until soft. This should take about 10 minutes. Mash the pumpkin with a fork and if it is too watery put it in a thick-bottomed pan over moderate fire and let it dry for a few minutes. Mix the milk and vinegar and let it stand for 10 minutes. Coarsely chop the chocolate. In a large bowl , mix together the flour, brown sugar, granulated sugar, spices, salt and baking soda. Stir well to mix all the ingredients. In another bowl, lightly beat the egg and then add the butter, the milk with vinegar and the pumpkin, stir and then pour over the dry ingredients, stir quickly using a large spoon, add the chocolate chips and stir briefly. The secret to good and light muffins is not to over work the mixture . Once ready, pour the mixture into 6 muffin tins lined with paper cups. I used silicone molds which and they don’t need to be greased. Bake the muffins for about 20 minutes and do the toothpick test to check that they are cooked through . Remove from the oven and after a few minutes remove them from the mold and cool on a wire rack.

  • 35 g caster sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/2 tablespoon baking powder
  • 55 g butter, softened
  • 60 g of butternut squash puree
  • 35 ml of milk
  • 5 ml of white wine vinegar
  • 1 egg
  • 50 g of dark chocolate

      qui la zucca mantovana la fa da padrona, e giustamente, ma io ho un debole per la butternut...questi muffin sarebbero venuti bene con qualsiasi zucca, te lo assicuro!

  3. Anche gran parte delle castagne che mi sono state donate erano con annesso inquilino :-( ma il gusto non dubito che sia stato fantastico (di quelle sane ovviamente)!
    Ottimi anche questi muffins in entrambe le versioni..non saprei proprio quale scegliere :-P

      io ho assaggiato sia quello alla zucca, anzi quello l'ho divorato e ho assaggiato quello al cioccolato e non so quale mi sia piaciuto di più. Quello di cioccolato è ricco, quello con la zucca e le spezie raffinato e profuma di Natale e di feste. Decisamente buoni tutti e due.

    Questi muffins devono essere buonissimi, sono così invitanti, mi piacciono molto i dolci con la zucca, ma non ho mai provato l'abbinamento con il cioccolato, devo provvedere :-)
