Dal Giardino alla Tavola - Zucchini e Pomodori al Forno or Ovenbaked Courgette and Cherry Tomatoes

Qualche giorno fa ho fatto dei gustosissimi involtini con degli zucchini impanati e cotti in forno e poi farciti con del prosciutto crudo e della mozzarella. Erano avanzate le fette di zucchini che non ero riuscita a tagliare in maniera regolare e così ho pensato di usarle per fare un contorno gustoso che invogliasse anche Andrea a mangiarli con gusto, visto che dice che non gli piacciono perché non sanno di nulla.
Così ho preparato un condimenti di olio, parmigiano, aglio e erbe aromatiche per dare sapore a zucchini e pomodorini poi via tutto in forno.
Il risultato è stato molto gradevole, Andrea si è servito due volte e le verdure sono state spazzolate via.
Grande soddisfazione!
Ecco come si fa.
Per due persone

  • 2 zucchini medi
  • 2 manciate di pomodorini gialli
  • 2 pomodori tipo sammarzano
  • 3 cucchiai di olio extravergine d'oliva
  • 1 spicchio d'aglio, grattugiato
  • una manciata di parmigiano, grattugiato
  • erbe di Provenza essiccate o erbe aromatiche fresche a seconda del gusto, q.b.

  • pepe
Accendete il forno a 180°.
Tagliate gli zucchini a fette di pochi millimetri e poi tagliate le fette a tocchetti. In alternativa potete tagliarli a rondelle, tagliate i pomodorini a metà e i sammarzano a rondelle e mettete le verdure in una ciotola capiente.
In un'altra ciotola mescolate tutti gli altri ingredienti e poi versateli sulle verdure. Mescolate le verdure e il condimento poi sistematele in un unico strato su una teglia rivestita con carta da forno.
Infornate e cuocete per circa 30 minuti o fino a che gli zucchini cominciano a dorarsi e i pomodori saranno appassiti.
Sfornate e servite tiepidi o a temperatura ambiente.

A few days ago I made delicious courgette rolls, I breaded and baked the courgettes and then stuffed them with Parma ham and mozzarella slices. I had some leftover courgette slices,and so I decided to use them to make a tasty side dish that even Andrea would eat, as he says he doesn’t like courgettes because they are too bland.
So I prepared an good seasoning mixture using extra virgin olive oil, Parmesan cheese, garlic and herbs to infuse some great flavour into the veggies and then I roasted them in the oven.
The result was very pleasing, Andrea helped himself twice and the vegetables wee scoffed gladly.
Such a great satisfaction!
Here's how this dish is made.
For two people
  • 2 medium courgettes
  • 2 handfuls of yellow cherry tomatoes
  • 2 plum tomatoes 
  • 3 tablespoons extra virgin olive oil
  • 1 clove of garlic, grated
  • a handful of Parmesan cheese, grated
  • dried herbs of Provence or fresh herbs according to taste
  • salt
  • pepper
Preheat the oven to 180°C.
Cut the courgettes into slices a few millimeters thin and then cut the slices into pieces. Alternatively, you can cut it into round slices, cut the cherry tomatoes in half and the plum tomatoes into round slices and place the vegetables in a large bowl.
In another bowl mix all the dressing ingredients and then pour over the vegetables. Mix the vegetables and the dressing then arrange them in a single layer on a baking sheet lined with parchment paper.
Bake for about 30 minutes or until the courgettes begins to brown and the tomatoes are wilted.

Remove from the oven and serve warm or at room temperature.
