Aperitivi Gustosi - Bastoncini al Formaggio e Speck or Speck and Cheese Straws

Adoro i bastoncini al formaggio, questi poi hanno una marcia in più con lo speck che li arricchisce. Un modo simpatico e un po' diverso di servire un aperitivo o uno spezza fame pomeridiano. Io li mangerei anche a colazione...
Per 8/10 persone
  • 170 g di burro
  • 50 g di parmigiano
  • 80 g di speck
  • 200 g di farina 0
  • 100 g di Emmentaler
  • ½ cucchiaino di lievito per torte salate
  • ½ cucchiaino di pepe di Cayenna
  • ¼ cucchiaino di sale marino fino
  • 30 ml di acqua
Riscaldare il forno a 200°C.
Rivestire un paio di placche con della carta da forno.
Tritare grossolanamente lo speck.
Grattugiare i formaggi.
Combinare in una ciotola la farina, il lievito, il pepe di Cayenna, il sale, i formaggi e il burro ammorbidito e tagliato a cubetti. Mescolare bene e aggiungere l'acqua poco alla volta fino ad ottenere un impasto compatto.
Su un piano di lavoro leggermente infarinato stendere l'impasto fino ad avere uno spessore di circa 3-4 mm mettere lo speck su una metà dell'impasto, ripiegatelo su se stesso e dopo averlo steso ancora con un mattarello tagliarlo in bastoncini lunghi 10 cm e spessi circa 1,5 cm poi sistemarli sulle placche. Cuocere per circa 10-12 minuti o fino a che i bastoncini al formaggio iniziano a dorarsi.
Lasciar raffreddare i bastoncini su una griglia prima di servirli.

I love cheese straws, These ones have an edge thanks to the speck that enriches them. They can be a nice addiction to a cocktail and they are perfect for an afternoon snack.
I would even have them for breakfast...
  • 170 g butter
  • 50 g Parmesan cheese
  • 80 g speck
  • 200 g all purpose flour
  • 100 g Emmentaler cheese
  • ½ teaspoon baking powder
  • ½ teaspoon Cayenne pepper
  • ¼ teaspoon fine sea salt
  • 30 ml water
Preheat oven to 200°C.
Line two baking sheets with baking parchment.
Coarsely chop the speck.
Grate the cheeses.
In a bowl combine the flour, baking powder, cayenne pepper, salt, cheeses, and the softened butter cut into small pieces. Mix well and add the water a little at a time until you get a dough.
On a lightly floured surface roll out the dough until you have a thickness of about 3-4 mm then put the speck on one half of the dough, fold the other half over it and flatten with a rolling pin then cut into 4 inches long and ½ inch wide sticks than adjust them on the baking sheets. Bake for about 10-12 minutes or until the cheese straws start to brown.
Allow to cool on a wire rack before serving.
